SICILIAN SUPPER

Ground beef, tomato and a tasty cream cheese sauce come together in this hot, hearty casserole. I recently took it to a banquet, and recipe requests came from every table.

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. , Meanwhile, in a large skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in tomato paste, water, 1 teaspoon sugar, salt, basil, garlic powder, chili powder and 1/8 teaspoon pepper., In a large saucepan, saute green onion in oil until tender. Add cream cheese and milk; stir until blended. Stir in 1/3 cup cheese, and remaining sugar and pepper. Drain noodles; stir into cheese mixture., In a greased 8-in. square baking dish, arrange alternate rows of beef and noodle mixtures. Sprinkle with remaining cheese. Cover and bake 20-25 minutes or until bubbly.

2 cups uncooked egg noodles
1 pound ground beef
1/2 cup chopped onion
1/4 cup chopped green pepper
1 can (6 ounces) tomato paste
3/4 cup water
1-1/2 teaspoons sugar, divided
1/2 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
1/4 teaspoon pepper, divided
1 tablespoon finely chopped green onion
1 tablespoon olive oil
1 package (8 ounces) cream cheese, cubed
3/4 cup milk
1/3 cup plus 2 tablespoons grated Parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees. Brown ground beef, onion and pepper in saucepan. Cook until beef is done. Drain well.
  • Add tomato paste, tomato sauce, water, and dried Italian seasoning and stir well to blend.
  • Let simmer for 10 minutes.
  • Meanwhile, cook elbow macaroni as directed on package. While macaroni is cooking, combine cream cheese and milk in medium bowl. Cook in microwave on medium power for 2-3 minutes, stirring once halfway through cooking. Remove from microwave and stir with wire whisk until sauce is smooth.
  • Drain noodles and add to cream cheese sauce along with sour cream and 1/2 cup Parmesan cheese; stir.
  • In 2 quart casserole dish, place all of cream cheese mixture. Top with all of the ground beef mixture and sprinkle with remaining 1/4 cup Parmesan cheese.
  • Bake at 350 degrees for 20-30 minutes until casserole is bubbly.
  • To freeze, add 1 tablespoons cornstarch to the cream cheese sauce. Prepare casserole as directed, except instead of baking, chill in refrigerator. Wrap well and freeze up to 3 months.
  • To thaw and reheat, thaw casserole overnight in refrigerator.
  • Bake, covered, for 25-35 minutes 5 minutes longer until bubbly.

This is another Kraft recipe from several years ago. I started making it in 1980 and we find it very good. The noodles with the cream cheese next to the beef mixture is refreshing.

Steps:

  • Brown beef and drain.
  • Add onion and cook until tender.
  • Stir in tomato paste, water, salt, and garlic powder.
  • Simmer 5 minutes.
  • In a separate pan, sauté the bell pepper in butter.
  • Add the cream cheese and milk stirring until the cheese is melted.
  • Stir in parmesan, salt and noodles.
  • In a 10x6-inch baking dish alternate stripes or crosswise rows of meat and then noodles.

Easy Pizza Pasta Casserole (OAMC) image

Steps:

  • Brown ground beef, onion, garlic and seasoning in oil.
  • Drain.
  • While beef is browning, cook pasta according to the packaging
  • Stir in pasta, spaghetti sauce and 3 cups cheese.
  • Place mixture in 2 greased 9x13x2 inch baking pans or 4 square pans.
  • Sprinkle with remaining mozzarella.
  • Top with pepperoni.
  • Cover and freeze up to 3 months.
  • To cook now: Bake uncovered at 350 degrees for 25-30 minutes, until heated through.
  • To bake frozen casserole: Thaw in refrigerator overnight and bake at 350 for 35-40 minutes, till hot.

I found this yummy recipe at a busy cooks website, and wanted to share it. It is like a goulash, but with the added cream cheese & milk, it was so creamy. Even my non-spaghetti eating, picky child loved this dish! We didn't have any parmesean grated cheese so i substituted 4 cheese mexican blend instead, and it was still great. I also like to make things as easy as possible, so I buy frozen chopped green peppers and onions, and just added them to the sauce rather than the green peppers to the macaroni mix.
