Mizithra Browned Butter Pasta image

Steps:

  • Cook pasta in large pot of salted, boiling water until al dente. Drain.
  • When pasta is almost done, start slowly melting butter over medium heat until golden. Skim butter solids off top. Toss pasta with butter. Sprinkle with cheese to taste.

SIMPLE AND AMAZING- MIZITHRA CHEESE SPAGHETTI

This recipe came from a friend who worked at a great Italian restaurant near Monterey CA in the 1970's. The important thing is to use real Mizithra Cheese available at delis and Trader Joes. Nothing else is as good.

Simple and Amazing- Mizithra Cheese Spaghetti image

Steps:

  • Using package directions as a guide, cook spaghetti in large pot of boiling water until done but still firm, "al dente". Drain.
  • While spaghetti is cooking, start slowly melting butter over medium heat, alow to continus cooking, while stirring, until butter is a rich golden brown color. Skim butter solids off top.
  • Toss pasta with butter. Plate each serving and toss shredded cheese on top. Serve immediately.

1 cup(s) real butter, room temperature
3/4 pound(s) real mizithra cheese, shredded or grated

Steps:

  • Cook spaghetti until until tender but firm to the bite and drain.
  • Melt butter in a large skillet and cook just until it turns brown.
  • Meanwhile, combine chesses.
  • Place spaghetti on warm platter, sprinkle with mixed chesses, then drizzle with browned butter.
  • Sprinkle with parsley.
