ALICE'S EASY BLUEBERRY CAKE
This is a delicious and easy blueberry cake to make with things that are usually on hand. My grandmother passed this down to me and now I make it with my kids.

- Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch baking dish.
- Sift 2 1/2 cups flour, 1 1/2 cup sugar, baking powder, and salt together in a bowl. Add milk, vegetable oil, eggs, and vanilla extract; mix into a semi-thick batter.
- Toss blueberries with about 2 teaspoons flour in a separate bowl; fold into batter. Pour batter into prepared baking dish.
- Bake in the preheated oven until cake is lightly browned, 25 to 30 minutes. Brush melted butter on top of cake and sprinkle with about 2 tablespoons sugar. Continue to bake until golden brown and a toothpick inserted in the center comes out clean, 5 to 10 more minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
- Cream butter or margarine and 1/2 cup sugar until fluffy. Add salt and vanilla. Separate eggs and reserve the whites. Add egg yolks to the sugar mixture; beat until creamy.
- Combine 1 1/2 cups flour and baking powder; add alternately with milk to egg yolk mixture. Coat berries with 1 tablespoon flour and add to batter.
- In a separate bowl, beat whites until soft peaks form. Add 1/4 cup of sugar, 1 tablespoon at a time, and beat until stiff peaks form. Fold egg whites into batter. Pour into prepared pan. Sprinkle top with remaining 1 tablespoon sugar.
- Bake for 50 minutes, or until cake tests done.

- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch pan.
- Sift flour, baking powder, sugar, and salt together in a large bowl. Beat shortening in a separate bowl until creamy; stir into flour mixture, alternating with milk. Beat flour-shortening mixture until mixed, about 2 minutes. Add egg and beat until mixed, about 1 minute.

- Preheat the oven to 200C/fan 180C/gas 6. Butter a 22cm cake tin, line the bottom with baking parchment. Put a third of the frozen blueberries aside, sprinkle the rest with flour, set aside (do not defrost).
- In a large bowl, beat the sugar and eggs until smooth, add the vegetable oil, lemon zest and juice and yogurt. Combine the wet ingredients with the flour, baking powder and a pinch of salt using a whisk. Don't worry if a few lumps remain. Add the blueberries mixed with flour.
- Pour the cake mixture into the prepared tin. Sprinkle the remaining berries on top. Put the tin in the oven, reduce the temperature to 180C/fan 160C/gas 4. Bake for 1 hr 10 mins-1hr 20 mins or until a skewer inserted into the cake comes out clean. Remove from oven and set aside to cool. After removing from the baking tin, sprinkle the cake with icing sugar, if you like.

This recipe was given to me by a friend many years ago. It's always a big hit when it is served! The recipe calls for whipping cream, but I usually use whole milk since I don't always have cream in the house. Awesome served for dessert or breakfast!

MY MOM'S MAGNIFICENT BLUEBERRY CAKE
My mom is a magnificent cook, and this blueberry cake has been a favorite for many generations of people around the world. It is very forgiving, freezes very well, and can easily be doubled for a 9"x13" pan. While fresh blueberries are best, I stock up on them when in season, freeze them, and then bake this cake with frozen berries, and it is still wonderful. One issue in our family, though, is that some of us (who shall remain nameless) annoy others by picking off all the crumbles from the top, thereby diminishing the experience for everyone else. What can I say? It's hard to resist!

HOMEMADE BLUEBERRY CAKE
I seriously modified the Amish Blueberry Cake #23060 to result in this concoction. We loved it. The batter was light and fluffy and the cake moist and delicious. I frosted it with the buttercream version of white icing #16017, though frosting wasn't needed. Super yummy! Even better after sitting in fridge overnight.

This cake is so good and moist you will make it all the time! You can also change the kind of cake and filling to make an unlimited choice of cakes. This one is French vanilla cake mix with Blueberry pie filling but you can also choose from: Devil's food cake mix with Cherry pie filling, Spice Cake mix with Apple pie filling, Cherry Chip cake mix with Cherry pie filling or anything you can think of.

- Grease a 9" square cake pan.
- In a large bowl combine the flour, 1 cup sugar, baking powder, salt, eggs, milk, melted butter, lemon rind and juice.
- Blend at low speed until all ingredients ar moistened, then beat at medium speed for 2 minutes.
- Stir in 1 cup blueberries and spread evenly into the greased 9" square cake pan.
- Sprinkle remaining blueberries on top and then sprinkle 2 tablespoons sugar and almonds on top of blueberries.
- Bake at 350 for 55-65 minutes, cool on rack and serve warm or cold.
- Hint: when in season use fresh blueberries and check shorter baking time for doneness.
