- Bake in the preheated oven, stirring occasionally, until potatoes are crisp and golden brown, 25 to 30 minutes.
- Transfer potatoes to a plate and top with Mexican cheese blend, black beans, diced tomatoes, black olives, green onions, and green chiles.

- Begin by placing pepper jack cheese in small flat circles on a non stick baking sheet. Also, sprinkle Parmesan cheese on the same baking sheet. Bake at 400 degrees for approximately 5 minutes. - Preheat oven to 425 degrees F. Place 1 TBSP olive oil in each of 4 (6 oz) glass custard or baking cups and swirl to coat. Place baking dishes on a cookie sheet and place in the heating oven while while you prepare the rest of the ingredients.
- Combine Simply Potatoes Shredded Hash Browns, Grated Onion, Eggs and Salt in a mixing bowl. Divide potato mixture evenly among the preheated prepared baking cups.
- Bake at 425 degrees F for approximately 45 minutes until golden brown and crispy. Remove from oven and allow to rest for one or two minutes. Run a knife around each cup and invert on a serving plate. Serve warm.

- Par boil your peeled chunked sweet potato.
- Grate it & mix in with the Simply Potatoes shreds.
- Blend in the egg & the rest of ingredients.
- Heat a non stick skillet brushed with EVOO & some melted butter.
- Put the mixture by 1/4 cups into the hot skillet. Press out to flatten.
- Brown 1-2 minutes per side.
- Serve with applesauce, butter, maple syrup or even just a sprinkle of white sugar over the butter!
- This was a favorite lunch of my parents. Also I fixed it often for my Mom & her gal friends after my Dad's passing.
