CLASSIC WILTED LETTUCE SALAD
When we were kids, my sister and I would prepare the freshly picked lettuce for this wilted lettuce salad recipe, rinsing it several times and carefully drying it. As we did so, we quibbled about the portions we'd each have. Somehow, it seems she always managed to get more! We still can't get enough of this salad. -Doris Natvig, Jesup, Iowa

- In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. , To the hot drippings, add the vinegar, water, onions, sugar, salt and pepper, stirring until sugar is dissolved. , Place lettuce in a salad bowl; immediately pour dressing over and toss lightly. Top with egg. Serve immediately.

WILTED GREENS WITH BACON VINAIGRETTE
Steps:
- Place romaine in a serving bowl. In a skillet over medium heat, cook bacon until crispy. Remove bacon and crumble over greens. To the pan, add sugar and vinegar, and simmer until sugar is dissolved, scraping up bacon bits that cling to the bottom of the pan. Season with salt and pepper, to taste. Pour hot dressing over greens and toss. Serve immediately.
SIMPLY SWEET WILTED LETTUCE
This recipe was a total accident!! I was making wilted lettuce from another recipe and misread the ingredients not realizing it until the salad was gone and everybody was talking about how good it was....sometimes an accident can make the best recipe!!

Steps:
- Just before serving shred lettuce with knife.
- In a large skillet fry bacon until crisp. Remove bacon from pan and crumble. (Leave bacon drippings in the skillet).
- Add vinegar to the bacon drippings; heat through. Add green onions and season with salt, pepper and sugar.
- Drizzle over shredded lettuce Toss 1 to 2 minutes until lettuce is wilted.

- Heat oil in a nonstick skillet over medium heat. Add garlic, celery, and red-pepper flakes; saute until celery is softened and golden, about 5 minutes.
- Add lettuce, pressing it down to fit. Season with salt and pepper. Cover; cook, tossing occasionally, until lettuce is completely wilted and liquid has evaporated, 10 to 12 minutes.

- Cut up lettuce and onion tops, place in a large bowl.
- Place bacon on top of lettuce.
- Have all the rest of the ingredients ready, because this goes quickly!
- Pour out all but 3T. of the bacon grease.
- Set the skillet on medium heat and add the cream, salt and sugar.
- From this point you will be whisking constantly.
- Heat the cream until it begins to steam - don't let it bubble.
- Add the vinegar slowly, whisking constantly until the mixture begins to steam.
- Pour the mixture over the lettuce, toss and serve immediatly.
- Make sure you have some good bread to soak up the leftover juices - trust me, folks will fight for the last drops!
- Note: All the whisking is to keep the dressing from "breaking", or separating. If it does, no problem. It's not as pretty, but it still tastes fabulous.
