CHICKEN FLORENTINE STYLE

- Sprinkle the chicken with salt and pepper. Dredge the chicken in the flour to coat lightly. Shake off any excess flour. Melt 2 tablespoons of butter in a heavy large skillet over medium heat. Add the chicken and cook until brown, about 5 minutes per side. Transfer the chicken to a plate and tent with foil to keep it warm.
- Melt 2 tablespoons of butter in the same skillet over medium heat. Add the shallots and garlic and saute until the shallots are translucent, stirring to scrape up any browned bits on the bottom of the skillet, about 1 minute. Add the wine. Increase the heat to medium-high and boil until the liquid is reduced by half, about 3 minutes. Add the cream and boil until the sauce reduces by half, stirring often, about 3 minutes. Stir in the parsley. Season the sauce, to taste, with salt and pepper. Add the chicken and any accumulated juices to the sauce, and turn the chicken to coat in the sauce.
- Meanwhile, melt the remaining 2 tablespoons of butter in another large skillet over medium heat. Add the spinach and saute until heated through. Season the spinach, to taste, with salt and pepper. Arrange the spinach over a platter. Place the chicken atop the spinach. Pour the sauce over and serve.

I got this recipe from a little cookbooklet I bought at the grocery store. Made it tonight and it is FANTASTIC ! I will stress; do NOT omit the nutmeg I think it would change the taste too much.

- Cook pasta according to directions.
- In small bowl, stir 1/4 cup of the half and half, flour, salt and nutmeg till smooth;set aside. Melt butter or margarine on medium. Add chicken cook chicken 6-8 minutes till chicken is browned. Add tomatoes,mushrooms and spinach. Cook 5 minutes, stirring till mushrooms are tender. Reduce heat to low. Stir in pasta and half and half mixture. Cook 1 minute till thick. Add remaining half and half. Sprinkle cheese on top. Cover and let sit for 2-3 minutes till cheese is melted.

- Melt butter in a large skillet over medium heat. Add garlic and cook until fragrant, for about 1 minute. Stir in the mushrooms, 1/2 teaspoon salt, 1/2 teaspoon black pepper and Italian Seasoning continue to cook until tender, about 5 minutes. Remove to a plate and set aside.
- Pat chicken breast dry with paper towels to remove any moisture. Mix together flour, and 2 Tablespoons Parmesan cheese in a shallow bowl or plate. Dredge chicken breasts in flour mixture, shaking off excess.
- Add the remaining 4 tablespoon butter to the skillet. Cook the chicken over medium heat, until the chicken is cooked. Remove chicken to plate and loosely cover with aluminum foil to keep it warm.
- Add the chicken broth to the pan and bring to a boil over medium heat, stirring well to loosen all the brown bits on the bottom of the pan. Reduce the heat and simmer uncovered, until the broth is reduced to about 1/4 of a cup.
