Sunny's Peaches and Cream Pancake image

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium bowl, make enough pancake batter according to the package instructions to make 6 pancakes. Whisk the lemon juice into the batter. Let rest in the refrigerator while you make the peaches.
  • Heat an oven-safe 10-inch nonstick skillet over medium heat. Add the butter, brown sugar, cinnamon and a pinch of salt. Cook and mix together until the butter is melted and the mixture is combined. Add the frozen peaches and mix to coat. Let cook for 1 to 2 minutes. Pour the pancake batter over the peach mixture. Transfer to the oven and bake until golden brown and a toothpick inserted in the center comes out clean, 15 to 20 minutes.
  • In a medium bowl whisk together the cream cheese, lemon zest and powdered sugar. Add 1/2 cup heavy cream and a pinch of salt. The icing should be thick but pourable. If needed, whisk in more heavy cream 1 tablespoon at a time until pourable.
  • Remove the pancake from the oven. Slice like a pie and serve each slice drizzled with the icing.

Snowman Pancakes with Bacon Scarves image

Steps:

  • Line a plate with paper towels and set aside. Cook the bacon in a large nonstick skillet over medium heat until brown and crispy, 4 to 5 minutes per side. Remove to the prepared plate. Discard the drippings and wipe the pan clean with a paper towel.
  • Combine the heavy cream, 1 tablespoon of the confectioners' sugar and 1/4 teaspoon vanilla extract in a medium bowl. Using a whisk or a handheld mixer, beat the cream until it holds medium peaks, about 2 minutes. Set the bacon and whipped cream aside while you make pancakes.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, salt and nutmeg. In another bowl, beat the eggs, then whisk in the milk and the remaining 1/2 teaspoon vanilla. Melt 3 tablespoons of the butter in the skillet over medium heat. Whisk the butter into the milk mixture. Add the wet ingredients to the flour mixture, and whisk until a thick batter is just formed (a few lumps are okay).
  • Keeping the skillet at medium heat, ladle two 1/4-cup circles of the batter onto the skillet to make 2 pancakes. Above each, ladle two 2-tablespoon circles of batter to form the snowmen's heads, close enough for the pancakes to run together. Cook, until bubbles break the surface of the pancakes and the undersides are golden brown, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side. Transfer the pancake snowmen to a serving plate. Repeat with the remaining batter and ingredients, adding more butter to the skillet between each addition.
  • Sift the remaining confectioners' sugar over the snowmen to create a snowy effect. Place a strawberry half over each snowman's head to form a cap, and a bacon strip across each neck to form a scarf. Place 2 chocolate chips on each head to make eyes, and a row of 5 chips under the eyes to form a smile. Add a row of 3 or more chips to each body to create buttons. Fit a medium pastry bag with a large (#840) pastry tip or snip the edge of a resealable plastic bag to make a 1/4-inch hole, and fill with the whipped cream. Pipe a row of rosettes on the bottom of the strawberry "hat" to form a decorative brim.
  • Serve immediately with warm maple syrup on the side.

Steps:

  • Cook bacon in two batches in a large skillet over medium-low heat, turning occasionally, until crisp, 6 to 7 minutes. Drain bacon on paper towels, then break into 3/4- to 1-inch pieces. Reserve drippings, and wipe out skillet.
  • Preheat oven to 200 degrees. Whisk together flour, baking powder, baking soda, and salt in a medium bowl. Whisk together buttermilk, syrup, eggs, and butter. Add to flour mixture, and whisk until just combined (batter will have lumps).
  • Heat 1 teaspoon drippings in skillet over medium-low heat. For each pancake, arrange some of the bacon pieces in a circle in skillet. Slowly pour 1/3 cup batter over bacon, starting in center and moving outward in a swirling motion to prevent bacon from shifting. Cook until small bubbles form on surface. Flip, and cook until golden brown. Transfer pancakes to a baking sheet, and keep warm in oven. Repeat with remaining bacon and batter. Serve with syrup.

Oven-Baked Peach Skillet Pancake image

Steps:

  • Place a cast iron skillet in the oven and preheat to 375 degrees F (190 degrees C).
  • Mix flour, brown sugar, baking powder, cardamom, and salt together in a large mixing bowl.
  • Whisk milk, peach nectar, egg, and 2 tablespoon melted butter together in a separate bowl. Add to the flour mixture with 1 1/2 cup sliced peaches; mix until well blended. Set remaining peaches aside.
  • Remove the skillet from the oven with a heat-proof oven mitt; it will be hot. Brush the bottom and sides with remaining 1 tablespoon melted butter. Add pancake mixture and spread out evenly. Arrange remaining peach slices over top and sprinkle with sugar.

Bacon Pancake Dippers image

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Arrange the bacon in a single layer on the prepared baking sheet, spacing the slices apart so they aren't touching.
  • Bake the bacon until it reaches your desired level of crispiness, 10 to 15 minutes. Remove from the oven and set aside.
  • In a large bowl, whisk together the flour with the sugar, baking powder, baking soda and salt.
  • In a medium bowl, whisk together the milk, sour cream, egg and 2 tablespoons melted butter.
