Slightly Different Meatloaf Recipes
SLIGHTLY DIFFERENT MEATLOAF
Copy Cat recipe of the meatloaf my mother used to make. She mentioned once that the BBQ sauce had coffee in it and I have been trying to crack it for years. I couldn't find one that was quite right but I think this is pretty close so I am posting it to keep it handy.

Steps:
- Preheat Oven at 375F
- Combine all Meatloaf ingredients in large bowl mixing well. Shape meatloaf onto lightly greased baking tray into a free form log shape. Bake for 45 Minutes.
- Lightly sauté onion in margarine until translucent. Add all other sauce ingredients and bring slowly to the boil. Reduce heat to low and simmer for 15 minutes.
- Once Meatloaf has been cooking for 45 minutes reduce oven to 350°F Baste meatloaf with half of BBQ Sauce and cook for further 45 minutes basting with remaining sauce often.
- Rest for 10 minutes loosely covered with foil before slicing Meatloaf thickly and serving with mashed potato and any remaining sauce.
