SLOPPY JOSEPHINE SLIDERS (VEGETARIAN)

Author Leah Eskin finds bean-based burger substitutes to be tired. While experimenting, she realized that the additions were really satisfactory in their own right, and, thus, came up with this recipe.

Sloppy Josephine Sliders (Vegetarian) image

Steps:

  • Heat olive oil in a wide, heavy skillet. Add the onions, 1/8 tsp salt and a few grinds of pepper. Cook, stirring often, over medium-heigh heat, until onions are browned and sticky/crispy, about 15 minutes. Remove pan from heat.
  • Meanwhile, in a second wide, heavy skillet, melt butter. Add all the mushrooms, garlic, 1/8 tsp salt and a few grinds pepper. Cook over medium-high heat, stirring frequently, until mushrooms are richly browned, about 15 minutes.
  • Increase heat to high, pour in cognac and cook until liquid disappears, 1 minutes. Remove pan from heat.
  • Split buns; lay them open-faced on a broiler rack. Cover both halves with cheese. Slide under the broiler just until cheese has melted, 1 to 2 minutes. Set buns on serving platter.
  • Heap mushrooms onto each bottom bun. Top with onions. Cover with top bun. Enjoy.

3 tablespoons olive oil
2 large onions, very thinly sliced
1/4 teaspoon coarse salt
fresh ground black pepper
3 tablespoons unsalted butter
3 cups sliced shiitake mushrooms
2 cups sliced white mushrooms
2 garlic cloves, chopped
2 tablespoons cognac
1/2 lb sharp cheddar cheese, sliced
8 soft slider buns, potato recommended

Steps:

  • Preheat oven to 350°F (180°C).
  • In a saucepan over medium heat, add the ground beef and sprinkle with salt and pepper.
  • Using a spoon, break up the meat and stir until browned.
  • Add the onion and garlic and continue to cook until the onions are translucent.
  • Add the ketchup, mustard, Worcestershire, and brown sugar.
  • Stir until the meat is fully cooked and sauce is evenly combined. Set aside.
  • Cut the dinner rolls in half and place the bottom half in a baking pan.
  • Top with meat and sprinkle with cheese. Place the top of the rolls back on top.
  • Brush the rolls with melted butter and sprinkle with sesame seeds.
  • Bake for 10 minutes, or until rolls are toasted and cheese is melted.
  • Cut into individual sliders.
  • Enjoy!

Over the last several years I've probably typed up and taught dozens of takes on the American classic, good ole sloppy Joes. I am stupefied that it took me this long to come up with a meat-free buddy. Here ya go, meet Sloppy Veg-head Joe.

Steps:

  • Heat the oil in a skillet over medium-high heat. To the hot oil, add the jalapenos, bell peppers, onions, and garlic and cook until tender, 7 to 8 minutes. Fold in the black beans, cumin, and coriander and season to taste with salt and pepper. Stir in the tomatoes, brown sugar, and Worcestershire or vinegar and simmer the mixture for a few minutes to combine the flavors. Squeeze the lime juice into the pan and stir. Serve the joe mixture on buns with chopped pickles and cilantro to top and a couple of chips or a green salad alongside.

1 tablespoon canola or vegetable oil
2 jalapeno peppers, seeded and finely chopped
1 red, green, or yellow bell pepper, seeded and chopped
1 red onion, chopped

Steps:

  • In a 4- to 6-quart slow cooker, combine the ground beef, garlic, celery, peppers, onions, tomato sauce, ketchup, chili powder, dry mustard, onion powder, sugar, Worcestershire sauce, 1 teaspoon salt and 1/4 teaspoon pepper. Mix together with a wooden spoon, making sure to break up the ground beef. Set the machine to high and cook for 4 hours.
  • Spoon the sloppy joe mixture onto the buns to make sliders.

1 1/2 pounds ground beef (80 percent lean)
2 cloves garlic, grated
1 inner stalk celery (with leaves), finely chopped
1 red bell pepper, finely chopped
1/2 onion, finely chopped
One 14.5-ounce can tomato sauce, such as Pomi
1/2 cup ketchup
1 tablespoon chili powder
1 tablespoon dry mustard
1 tablespoon onion powder
1 tablespoon sugar

Steps:

  • Heat oil in a large pot. Saute onions 3 minutes until tender.
  • Add ground beef to pot. Cook until brown, stirring to separate meat. Drain well.
  • Stir in BBQ sauce (or Ketchup), mustard and Worcestershire.
  • Simmer about 5 minutes until flavors are blended.
  • Spoon onto slider rolls.

  • Heat a large skillet over medium-low heat and add some nonstick spray or add a bit of olive oil. When hot, add the onion and slowly sauté, seasoning with a pinch each salt and pepper.
  • When the onions are soft – about 5 minutes – turn up the heat to medium and add the mushrooms. Season with another pinch of salt and pepper and cook until the mushrooms and onions are slightly browned and fragrant – about 3 minutes.
  • Remove from heat and add beans and mash. You’re looking for a rough mash, not to turn it into a paste, so you can leave some whole or halved if you want. Taste and add another pinch of salt, or pepper if needed.
  • Transfer the mixture to a mixing bowl, add the quinoa, chili powder or cumin and stir. Lastly, add the walnuts a little at a time until the mixture is thick and malleable enough to form into patties. Pop in the fridge for 10-15 minutes to cool and preheat your oven to 375 degrees F (190 C). Coat a baking sheet with nonstick spray or olive oil.
