Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels; crumble when cooled. Drain all but 3 tablespoons of bacon drippings from skillet.
- Cook and stir cabbage, onion, and mushrooms in the remaining bacon drippings until tender and lightly browned, about 20 minutes. Fold bacon into cabbage mixture. Season with salt and black pepper.

- Place mushrooms, onions and garlic in a 5- or 6-qt. slow cooker. In a small bowl, whisk remaining ingredients; pour over mushrooms. Cook, covered, on low until mushrooms are tender, 6-8 hours., Freeze option: Freeze cooled mushrooms and juices in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, stirring gently and adding a little broth or water if necessary.

SLOW COOKER CABBAGE & MUSHROOMS
If you like cabbage, mushrooms, and even spicy mustard, this is an excellent and tasty side dish. The mustard flavor imparted is mild. I used Shiitake and White Crab mushrooms, but button mushrooms would absolutely work in this dish.

- Grease the inside of your slow cooker crock with the butter and just leave the excess in the bottom of the crock. Pour in the broth and add the mustard, whisk to combine.
- Add the cabbage, mushrooms, and carrot to the slow cooker.
- Mix everything together, season with a pinch of black pepper. Cover the slow cooker and set to Low setting and let cook for at least 6 hours, and up to 10 hours. Using the High setting is not recommended or the cabbage will be crunchy.
- After I mixed and had the cooker on Low, I realized I had some White Crab mushrooms, so I chopped those and added them.
- Mix those in, and now I have this cooking, can never have enough mushrooms.
- When ready to serve, taste and season with salt and pepper as desired.
- Use a slotted spoon to remove from the slow cooker and serve as a side dish any meal.
HEARTY CABBAGE-RUTABAGA SLOW COOKER SOUP
An easy and delicious weekday meal; just throw the ingredients in your slow cooker in the morning and come home to a hot and ready meal. I find it difficult to keep my roommate from sneaking scoops before dinner! If you are watching your sodium intake, use reduced or no-sodium broth and you are set! Recipe serves 6 as a reasonable size main dish, just add buns or biscuits to make it a full meal.
