CAJUN CHICKEN & PASTA

This kicked-up pasta dish is a family favorite and my most requested recipe. It's easy to adapt, too. Swap in shrimp for the chicken, add your favorite veggies, adjust the spice level to your family's taste-you can't go wrong! -Dolly Kragel, Smithland, Iowa

Cajun Chicken & Pasta image

Steps:

  • Toss chicken with Cajun seasoning; let stand 15 minutes. Cook pasta according to package directions; drain., In a large skillet, heat 1 tablespoon butter over medium-high heat; saute chicken until no longer pink, 5-6 minutes. Remove from pan., In same pan, heat remaining butter over medium-high heat; saute peppers, mushrooms and green onions until peppers are crisp-tender, 6-8 minutes. Stir in cream and seasonings; bring to a boil. Cook and stir until slightly thickened, 4-6 minutes. Stir in pasta and chicken; heat through. Top with tomatoes and basil. Sprinkle with cheese.

1 pound boneless skinless chicken breasts, cut into 2x1/2-in. strips
3 teaspoons Cajun seasoning
8 ounces uncooked penne pasta (about 2-1/3 cups)
2 tablespoons butter, divided
1 small sweet red pepper, diced
1 small green pepper, diced
1/2 cup sliced fresh mushrooms
4 green onions, chopped
1 cup heavy whipping cream
1/2 teaspoon salt
1/4 teaspoon dried basil
1/4 teaspoon lemon-pepper seasoning
1/4 teaspoon garlic powder
Pepper to taste
Chopped plum tomatoes
Minced fresh basil
Shredded Parmesan cheese

Chicken breast pieces are slow-cooked in a cajun alfredo sauce with tomatoes and red bell peppers, then served over pasta. ***After making this again, I do agree with the reviews that this is much too watery. I will leave the original recipe posted as-is since it is from a cookbook, but I recommend leaving out the chicken broth.

Steps:

  • In the slow-cooker, stir together chicken, alfredo sauce, tomatoes and juices, chicken broth, peppers and cajun seasoning.
  • Cover and cook on HIGH 3-4 hours, or LOW 6-8 hours.
  • Cook pasta according to directions on package, serve chicken and sauce over cooked pasta and garnish with chives if desired.

  • Cook pasta until al dente. Serve chicken over pasta.

Slow-Cooker Cajun-Seasoned Chicken image

Steps:

  • In 10-inch nonstick skillet, cook bacon over medium-high heat until crisp. Add bell pepper, onion and celery; cook 2 to 3 minutes longer or until crisp-tender. With slotted spoon, spoon bacon and vegetables into 3 1/2- or 4-quart slow cooker.
  • Sprinkle chicken thighs with 1 teaspoon of the Cajun seasoning; place in same skillet. Cook chicken 4 to 5 minutes, turning once, until browned on both sides. Arrange chicken and any remaining drippings over vegetables in slow cooker. Pour tomatoes over chicken. Stir in remaining teaspoon Cajun seasoning.
  • Cover; cook on Low heat setting 8 to 9 hours.
  • About 30 minutes before serving time, cook rice in water as directed on package. Serve chicken and sauce over rice.
