SLOW-COOKED PEPPER STEAK
After a long day working in our greenhouse raising bedding plants, I enjoy coming in to this hearty beef dish for supper. It's one of my favorite meals. - Sue Gronholz, Beaver Dam, Wisconsin

- Cut beef into 3x1-in. strips. In a large skillet, brown beef in oil. Transfer to a 3-qt. slow cooker. Combine the onion, soy sauce, garlic, sugar, salt, ginger and pepper; pour over beef. Cover and cook on low until meat is tender, for 5-6 hours. Add tomatoes and green pepper; cook on low until vegetables are tender, about 1 hour longer., Combine cornstarch and cold water until smooth; gradually stir into slow cooker. Cover and cook on high until thickened, 20-30 minutes. Serve with noodles or rice. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring gently. Add a little broth or water if necessary.

Steps:
- Heat oil in large skillet over medium-high heat until hot. Sprinkle beef with salt and pepper; place in skillet. Cook 4 to 6 minutes or until well browned, turning once.
- Meanwhile, in 3-1/2 to 4-quart slow cooker, combine onion, carrot and mushrooms; mix well.
- Cut browned beef into 4 pieces; place in slow cooker over vegetables. In same skillet, combine soup and tomato sauce; mix well. Pour over beef.
- Cover; cook on Low setting 8 to 10 hours. Stir sauce well before serving over beef.

- Salt and pepper the beef roast. Heat a large skillet over high heat with the canola oil. Add the roast and sear each side for 2-3 minutes until it forms a golden seared crust. Place the roast in a 5 quart slow cooker.
- Add the beef consommé, italian seasoning, garlic powder, italian seasoning and pepperoncini to the slow cooker. Top roast with butter slices.
- Cook on low for 8-10 hours or high for 5-6 hours. Shred the roast with a fork. Serve on hoagies topped with provolone cheese and additional pepperoncinis if desired.
