Steps:

  • Cook the onions and jalapenos in the vegetable oil in a large saucepan over medium heat until soft, about 5 minutes. Add the cumin, oregano, salt and garlic, and cook another 2 to 3 minutes. Add the beans, stock and 1 cup water and bring to a boil. Turn the heat to low and simmer 15 minutes.
  • Remove the beans from the heat and strain, reserving the liquid. Mash the beans in a small bowl with a potato masher, adding the vinegar and cooking liquid to keep the beans soft. (You will probably not use all the liquid.).

1/4 cup minced yellow onion
1 jalapeno pepper, minced
2 teaspoons vegetable oil
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
3 cloves garlic, minced
2 cups cooked black beans
1 cup chicken or vegetable stock
1 tablespoon white vinegar

Steps:

  • Pour the chickpeas into a colander and rinse them under cold running water. Drain well. Place the chickpeas in the bowl of a food processor fitted with the steel blade. Add the chicken stock and pulse until the chickpeas are coarsely pureed.
  • In a medium (10-inch) saute pan, heat 3 tablespoons of olive oil over medium heat. Add the tomato and saute for 3 to 4 minutes, until the tomato is softened. Add the garlic and cook for 1 minute more. Add the chickpeas, stirring to combine with the tomatoes and garlic. Cook for about 5 minutes, stirring occasionally, until heated through. Off the heat, stir in the Parmesan, parsley, lemon juice, 2 teaspoons salt, and 1 teaspoon pepper and taste for seasonings. Pile in a serving bowl, drizzle with extra olive oil, and serve with shards of grilled country bread.

2 tablespoons freshly squeezed lemon juice

  • Drain the butter beans, rinse and put it in a food processor. Add garlic, lemon juice, olive oil, black pepper, salt to taste and process it until super smooth. Adjust the seasoning and set it aside.
  • Heat a cast iron skillet at medium setting for five minutes. Hold your palm three inches above the pan and you should be able to feel the heat. Then add the almonds and roast at medium heat, stirring occasionally, for about 4 to 5 minutes. Cool the nuts and chop coarsely or crush using a mortar and pestle.
  • In the same skillet, dry roast pumpkin seeds and sunflower seeds for about 3 minutes. Remove the seeds from skillet and set aside.
  • In the skillet, take coriander seeds, cumin seeds, fennel seeds and dry roast for 30 seconds to 1 minute. When they begin to release the roasted aroma, lower the heat and add sesame and black seeds. Continue to dry roast until the sesame seeds start to tan, that is, about 30 seconds to 1 minute.

  • Pour pinto beans into a colander or strainer and allow to sit for a few minutes. DON'T RINSE them--our goal is to remove some of the liquid but not all of it.
  • Transfer beans to a large mixing bowl. Use a potato masher or some forks to mash the mixture until relatively smooth, with some chunks. Add the cream cheese and mash some more, until combined. Stir in the sour cream, taco seasoning, salsa, and 1/4 cup shredded cheese.
  • Pour mixture into an 8 inch or similar size baking dish and sprinkle the remaining shredded cheese evenly on top. Bake in preheated oven for 25 minutes or until cheese is melted and bubbly.

  • Heat oil in a medium to large size skillet over medium heat. Once sizzling when flicked with water, add onions and saute until becoming translucent.
  • Add in garlic and saute for 1-1.5 minutes, or until garlic is just turning golden and starting to smell fragrant, stirring constantly as it cooks.
  • Add in pinto beans, undrained black beans, cumin, coriander, and chili powder. Mix until seasonings are distributed and then bring beans to a boil and cook for 4-5 minutes, stirring about every 15-30 seconds so the juices don't burn on the bottom of the pan.
  • Add in lime juice and salt and reduce heat to medium low. Mix in until incorporated and then mash beans lightly with a heavy fork or potato masher. Mash heavier if you want a creamy refried beans consistency, otherwise leave some good bean chunks in there for texture.
