LEMONY STOVED POTATOES
Crispy roasties with a fresh citrus flavour - perfect served on a spread with roast meat, fish or vegetables

Steps:
- Heat oven to 160C/140C fan/gas 3. Tip the potatoes into a large roasting tin with the olive oil, lemon and 100ml water. Put the tin on a shelf under the lamb and cook for 1½ hrs. When the lamb comes out, give the potatoes a stir. Turn up the oven to 220C/200C fan/gas 7 and cook for a further 45 mins-1 hr. They won't go as crisp as roasties, so poke them with a knife to check they're cooked through.

STOVED POTATOES
In Scotland, everybody's grandmother has a slightly different recipe for stoved potatoes (a/k/a "stovies"). This is one of countless variations, but it's my favourite.

Steps:
- Melt bacon or meat drippings in a saucepan.
- Sauté onions until golden but not brown.
- Add potato slices, diced swede, water, and salt.
- Cover tightly, and then simmer very gently until cooked.
- Shake occasionally (try not to stir) to avoid sticking.
- Check for readiness after ½ hour (may require up to 1 hour).
- If potatoes are new, add oatmeal when done.
- Cover, shake well, and leave 10 minutes off heat.

GARLIC ROASTED POTATOES
Ina Garten's Garlic-Roasted Potatoes from Food Network's Barefoot Contessa make the perfect classic side dish for any meal.

- Preheat the oven to 400 degrees F.
- Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
- Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

- Melt the butter and heat the olive oil in a large skillet over medium heat. Arrange the potato slices across the bottom of the skillet in a single layer. Cook without stirring for 5 minutes, or until the potatoes have begun to brown on the bottom.
- Sprinkle potato slices with rosemary, thyme, oregano, parsley, and paprika. Turn the potatoes, and continue cooking 5 minutes, or until tender. Turn off the heat, and sprinkle the garlic and cayenne over the potatoes. Lightly toss for about 1 minute, until the garlic has softened.

STOVED CHICKEN (CHICKEN CASSEROLE WITH POTATOES, BACON AND ONION
A recipe I found for Scotland at All British Foods.com., posting for ZWT6. Sometimes also called 'stovies' this Scottish recipe derives from the French etouffer, to cook in a closed pot, and dates from the strong Scottish/French links of the seventeenth century. It makes a filling family dish which can safely be left to its own devices; a little extra cooking time will not spoil the flavour.

- Heat half of the butter and the oil in a large frying pan and fry the chicken and bacon for 5 minutes, until lightly browned.
- Place a thick layer of potato slices, then onion slices, in the base of a large ovenproof casserole. Season well, add the thyme and dot with half the remaining butter.
- Add the chicken and bacon, season to taste and dot with the remaining butter. Cover with the remaining onions and finally a layer of potatoes. Season and dot with butter. Pour over the stock.
- Cover and bake at 150°C (300°F) mark 2 for about 2 hours, until the chicken is tender and the potatoes are cooked, adding a little more hot stock if necessary.
- Just before serving sprinkle with snipped chives.
STOVE-TOP "ROASTED" RED POTATOES
This is a great and quick way to make red potatoes on the stove top and they still taste like they've been roasted in the oven for a long while. I had see on America's Test Kitchen how they make roasted potatoes, they microwave the potatoes first before the potatoes go in the oven, but then I thought to try them on the stove top. They turned out to be so good, tasted just like they had been on the oven, and took about half the time. You could also do these with golden or other small roasting potatotes.

- Wash the potatoes well, and slice into good bite-sized pieces. Put them into a glass microwave safe bowl, and microwave for 8 minutes.
- Remove from microwave and allow to cool for a few minutes.
- Heat a skillet onto medium heat and add the butter. Sautee the potatoes and add the seasonings to taste. Cook for about 6-8 minutes and the potatoes are softened and browned.
- Try olive oil.
STOVE-TOP POTATOES
Use the tiniest whole red potatoes you can find for this potato dish, but if they aren't available, simply quarter the larger ones.
