UDON SALAD

This is just a simple udon salad recipe. For non-vegetarian simply add about 250 grms smoked salmon cut into small strips

Udon Salad image

Steps:

  • Cook noodles in large pan of boiling water, uncovered, until just tender; drain.
  • Rinse under cold water, drain.
  • Toss noodles with sprouts, chives, onions, avocados, tomatoes and combined remaining ingredients.

250 g udon noodles
90 g snow pea sprouts
2 tablespoons chopped fresh chives
1 small red onion, chopped finely
2 small avocados, chopped finely
10 cherry tomatoes or 10 grape tomatoes, halved
80 ml light olive oil
2 tablespoons seasoned rice vinegar
1 tablespoon mirin
1 tablespoon lime juice
2 teaspoons wasabi

Smoked Salmon and Udon Noodle 'salad' image

Steps:

  • Cook udon noodles according to instructions. Drain and set aside to cool.
  • Slice salmon into strips.
  • Combine oil, rice vinegar, mirin, lime juice and wasabi in a small bowl.
  • When cool, place udon noodles in serving dish, and toss salmon, snow peas and spanish onion through.
  • Pour oil wasabi mixture over the salmon and noodles.
  • Sprinkle chives over the dish. Serve at room temperature.
  • Can be refrigerated overnight and served at room temperature next day.

  • Preheat the broiler. Broil the salmon, skin side down, 5 inches from the heat until golden, about 3 minutes. Turn the fillets and broil for 4 minutes, or until the skin is crisp and the fish is not quite cooked through. Transfer to a plate.
  • In a medium saucepan of boiling water, cook the udon until heated through, 1 minute. Drain the noodles and transfer to soup bowls.
  • Heat the olive oil in a large skillet. Add the spinach by handfuls and cook over high heat, tossing, until wilted. Mound the spinach on the udon and top with the salmon. Spoon the cooking juices in the baking dish over the fish, sprinkle with the sesame seeds and serve.
