- Place a large baking pan in oven. Preheat oven to 450 degrees F.
- Toss carrots, Brussels sprouts, and onion with oil, rosemary, salt, and pepper in a large bowl. Arrange vegetable mixture and sausage on the preheated pan in a single layer. Bake in the preheated oven until just tender, about 20 minutes.
- Preheat broiler to high. Add apple to pan; broil until apple is tender and vegetables are slightly caramelized, 5 to 6 minutes. Remove pan from oven. Squeeze lemon over pan and sprinkle with parsley.

SMOKED SAUSAGE AND APPLE BAKE
An easy and delicious blend of smoked sausage, apples, onions, and sauerkraut that everyone will love! This is great served with potatoes and cornbread. If you do not wish to use brandy, a good quality apple cider may be substituted for it in the gravy.

- Preheat the oven to 350 degrees F (175 degrees C). Brown the sausage in a large skillet over medium heat. Set aside.
- Make a layer of sliced apples in the bottom of a 2 quart casserole dish. Sprinkle with a bit of the cinnamon. Layer half of the onion, then half of the sauerkraut over the apples. Place all of the sausage slices over the sauerkraut, reserving the drippings in the pan. Cover the sausage with the remaining sauerkraut, onion, and top with apple slices. Sprinkle the remaining cinnamon over the top.
- Pour the heavy cream and brandy into the skillet with the sausage drippings. Place over medium heat, and stir to remove the bits of sausage flavor from the bottom. Pour over the sausage and apple casserole.
- Cover, and bake for 1 hour in the preheated oven. Let stand for a few minutes before serving.

SMOKED SAUSAGE AND APPLES
This is a real easy way to fix smoked sausage. I do it in the microwave and usually serve it with a green veggie and corn bread.

Steps:
- Slice smoked sausage into 1 inch coins, and place in a microwavable bowl with a lid.
- Add apples and onions.
- Sprinkle brown sugar over all. Add water. Cover.
- Microwave on high for about 5 mins or till apples are tender. (I use my fresh vegetable button for hard veggies).
- May season with salt and pepper if care to. We normally don't.
- Note: If you do not have a bowl with lid that will go into microwave, you may use plastic wrap, just be sure to vent it, by folding in one corner of wrap to make a little hole.
SAUSAGE WITH APPLE SAUERKRAUT
Dress up sauerkraut with apple and fennel and serve it with Polish sausage or bratwurst. Top with your favorite mustard or relish.

This dish has German roots, but is widely prepared in Switzerland. I'm not sure exactly where I found this recipe,but it's been DH and grandson's favorite deer hunting camp meal for many years. It cooks in one skillet so clean up is minimal.

- In a large skillet, brown smoked sausage in olive oil, add onions and cook for 3 minutes.
- Arrange all ingredients around sausage in skillet and cook over medium heat 30-40 minutes or until juice has cooked down.
- If kraut still has a sour taste, add more brown sugar to suit your taste.

This simple slow cooker lentil soup is flavored with tart apple and hearty smoked sausage, and finished with a little sour cream and mustard. If you don't have time to sauté the onions and apples, you can skip that step, going straight to Step 2 and putting the ingredients directly into the slow cooker. Small green lentils (also called French lentils or lentils du Puy) have a peppery flavor and keep their shape when cooked instead of falling apart, giving the soup an appealing texture. However, you could also use black lentils or easier-to-find brown lentils, but keep in mind that brown lentils will fall apart as they cook, creating a thicker stew. - Melt the butter in a large (12-inch) skillet over medium-high heat. Add the onion, season with salt, and cook, stirring, until the onion is translucent, about 5 minutes. Add half the diced apples and cook, stirring until softened, adjusting the heat as necessary to avoid scorching, about 5 minutes. Add the celery, garlic, sage and thyme, and stir to combine.
