- In a large cast-iron or other heavy skillet, cook the sausage over medium heat until no longer pink; drain. Add the onion, carrots and green pepper; cook until tender. Stir in the potatoes, salt and pepper. Reduce heat; cook and stir until lightly browned and heated through, about 20 minutes.

- In a large skillet oven medium-high heat, add olive oil, then onions and bell peppers. Cook, stirring often, for about 3 minutes. Add sausage and continue to cook and stir for another 3-4 minutes, or until vegetables are soft. Set aside.
- Layer thawed shredded potatoes in the bottom of the pan. (*tip - to thaw quickly, spread out on a cookie sheet and place in the oven while it heats and while you prepare the rest of the ingredients). Top with sausage and pepper mixture, then cheese, then eggs. Use a fork or spoon to stir ingredients together slightly to make sure that the eggs are evenly distributed.

- Heat the olive oil and butter over medium-high heat in a large skillet or cast iron. Add the potatoes and season with salt and pepper.
- Cook until desired crispiness about 10-15 minutes, stirring occasionally. Set aside using a slotted spoon.
- Turn the heat down to medium and cook the smoked sausage for 2 to 3 minutes on each side, until lightly browned.
- Add the onions and peppers and cook, stirring frequently, until the onions are soft and translucent and the peppers are tender. Add garlic and cook for 30 seconds. Season with salt and pepper.
