SPICY GUACAMOLE WITH CHIPOTLE

Steps:
- Cut open avocados and scoop all the flesh into a large bowl. Mash with a bean masher or spoon until there are no large chunks of avocado left.
- Squeeze lime juice over the avocado. Add cilantro and 1 chipotle pepper with some adobo sauce. Season with salt and pepper; mix to combine. Mix in red onion and jalapenos. Add tomato and mix gently to combine. Chill before serving garnished with remaining chipotle pepper and adobo sauce.

- Pit and scoop out avocados into a bowl. Add the onion, garlic, peppers, adobo sauce, cilantro, lime zest, lime juice, and salt. Mash and taste to adjust salt. Serve with chips.
SMOKEY CHIPOTLE GUACAMOLE
This is so fast and easy to make. The chipotles add a wonderfully smokey flavor. Feel free to add more or less depending on how hot you like it. Some chopped cilantro might be nice added to this as well.

- Cut avocados all the way around with a sharp knife.
- Scoop out the pit, then spoon avocado flesh away from skin into a mixing bowl.
- Add the juice of 1 lime, salt to taste, sour cream and chipotles in adobo.
- Mash well with a fork or potato masher until smooth.
- Serve with tortilla chips or your favorite mexican dishes.
