SOLE WITH FENNEL AND BLOOD ORANGES
I like to serve this with baby potatoes or fingerlings, which I cook in salted boiling water before I begin the fish, then drain and keep warm in the covered pot.

Steps:
- Cut away the ends of the orange, stand it on end and cut away the skin and pith by slicing down the sides, following the curvature of the fruit. Hold orange above a bowl to catch juice and cut the sections out from between membranes. Cut sections in half crosswise and set aside with the juice.
- Season fish with salt and pepper. Lightly dredge in flour and tap to remove excess.
- Heat 1 tablespoon olive oil over medium-high heat in wide, heavy skillet, preferably nonstick, that can accommodate fish fillets in a single layer. Add fennel and cook, stirring often, until crisp-tender, about 5 minutes. Transfer to a bowl and return the pan to the heat.
- Add the remaining olive oil and the butter to the pan. When butter has begun to foam, add fish fillets, rounded side down. Cook 2 to 3 minutes, until the fillets release easily from the surface of the pan and are lightly colored. If the fillets are thin, check after 1 minute. Cook on the other side for 2 to 3 minutes, until fish is opaque all the way through. Do not overcook, or fish will fall apart.
- Carefully transfer to individual plates or to a platter. Add lemon juice and orange sections and juice to the pan and stir constantly with a wooden spoon to deglaze. Juice should quickly reduce by half or more. Spoon juice and orange sections over the fish. Sprinkle chopped fennel fronds over top and serve with sautéed fennel on the side.

- Whisk 2 tablespoons white balsamic vinegar with 1/4 cup olive oil in a large bowl; season with salt and pepper. Add 1 thinly sliced fennel bulb and 1 tablespoon chopped fronds, 2 segmented blood oranges, 2 cups baby kale and 1/4 cup each thinly sliced red onion and chopped toasted hazelnuts; toss. Top with crumbled gorgonzola.
ORANGE AND FENNEL POACHED SOLE

- In a skillet boil the orange juice, the wine, and the vinegar with the shallots, the fennel seeds, and the zest, shaking the skillet, until most of the liquid is evaporated. Add the water, bring the mixture to a boil, and in it poach the sole, covered, at a bare simmer for 10 minutes. Transfer the sole with a slotted spatula to 2 plates and keep it warm, covered. Boil the poaching liquid until it is reduced to about 1/3 cup, remove the skillet from the heat, and swirl in the butter. Season the sauce with salt and pepper and pour it through a fine sieve over the sole.
ORANGE FENNEL SALAD
Steps:
- Cut the fronds from the fennel bulbs and reserve some of the feathery leaves for later. Cut each fennel bulb in half and remove the cores with a sharp knife.
- Fit a food processor with the thinnest slicing blade. Cut the fennel bulbs into wedges and place horizontally into the feed tube. Process in batches. Peel each orange, remove the pith with a knife, and slice. Set aside.
- For the dressing: Whisk together the oil, juice, 1 teaspoon salt and the pepper in a small bowl. Place the fennel slices, oranges slices and arugula in a large bowl. Pour the dressing over the salad and toss together. Sprinkle with salt and add some fennel fronds for decoration.
ORANGE, FENNEL & ROCKET SALAD

- Using a mandolin or a sharp knife, shred the fennel into thin slices.
- Remove the skin of the oranges with a knife and gently cut out the segments. Do this over a bowl to catch all the juice for the dressing. Squeeze any excess from the oranges after they have been segmented.
- Tip the onion into a bowl with the fennel, orange segments and rocket leaves.
- To make the dressing, combine the juice from the oranges with the olive oil and mustard. Drizzle over the salad and serve.

SCALLOPS WITH BLOOD ORANGE, FENNEL AND PISTACHIOS
Steps:
- In a large bowl, soak the fennel in ice water. Peel the blood oranges with a sharp knife, being sure to remove all of the bitter white pith. Working over a bowl, cut in between the membranes to release the sections. In a medium bowl, whisk the 6 tablespoons of blood orange juice with 1/4 cup of the olive oil and season with salt and pepper. Drain the fennel and pat dry. Add it to the dressing and toss to coat. Mound the salad on 10 plates. In a large skillet, heat the remaining 1/2 cup of oil until shimmering. Season the scallops with salt and pepper and rub with the fennel pollen. Add the scallops to the skillet and cook over high heat until browned on the bottom, about 3 minutes. Add the butter and capers to the skillet. Turn the scallops over and cook just until white throughout, 2 minutes longer. Set the scallops on the fennel salad. Cook the capers, basting them with the fat in the pan, until browned and crisp, 2 minutes. Scatter the capers, olives, pistachios and orange sections all around and serve.

GUINEA-FOWL (OR CHICKEN) WITH FENNEL, POTATOES AND BLOOD ORANGES
Do you know what a guinea-fowl is? Well, I don't. But I do know that this recipe works fantastically well with chicken (it's the only way I've ever tasted it). No blood oranges available? No worries! Use normal ones. Yes, it does taste good with normal ones. Did I just say good?!? I meant DELICIOUS! If you love fennel (not many people do, though) and olives (so many people who don't...) this recipe is for you! Have I told you already that it tastes WONDERFUL? I did? Then go ahead, buy the ingredients, cook it and don't forget to let me know how you liked it! Bye the way, the birds need to marinate for a day, so it's a good idea to marinate it either the evening ahead (if it's for lunch) or in the morning (if it's for dinner). - Cut the guinea-fowl legs away from the breast meat. This is because they take different times to cook, and you want to get it perfect.
- MARINADE----------------------.
- Bash up the fennel seeds, half the rosemary, half the thyme and the garlic in a pestle and mortar.
- Mix in the gin and the zest and juice of the oranges with 5 tablespoons of olive oil.
- Season with black pepper only.
- Get yourself a big sandwich bag (or something similar, Jamie suggests a clean (!) bin liner). Make sure there are no holes in it.
- Push the guinea-fowl legs and breasts down into one corner of the bag, then add the marinade.
- Squeeze out all the air you can and tie a knot in the bag. Put it in a bowl or on a large plate and keep it in the fridge for a day, turning the bag over when you remember.
- GET READY TO ROAST---------------.
- Preheat your oven to 250°C / 450°F / gas 8.
- Parboil the potatoes in boiling salted water for about 5 minutes, then add the fennel, continue to boil for five minutes more and drain.
- Remove the guinea fowl from the fridge, drain away the marinade, and place the meat on a board.
- Use a piece of kitchen towel to blot off any excess moisture from the meat.
- ROAST----------------------.
- Put the legs into a big roasting tray and roast in the preheated oven for 20 minutes.
- Take the tray out of the oven - you should have a nice bit of fat in the bottom. Remove the legs to a plate.
- Put the potatoes, fennel and the rest of the thyme and rosemary into the tray and give it a really good shake about.
- Put the legs back in the tray, along with the breast meat, which should be skin side up.
- Place in the oven for about 30 minutes, until both the skin of the breast meat and the potatoes are nice and golden.
- Remove from the oven, sprinkle with olives and allow to rest for 5 minutes.
- SERVE---------------------.
- To serve, cut the guinea-fowl into chunks.
- Divide a bit of everything between you plates and sprinkle with the herby fennel tops.
- TRY THIS------------------.
- Make a blood orange dressing with the juice of an orange and the same amount of olive oil.
- Season and drizzle it over everything.
