SOLO SPAM AND PINEAPPLE CASSEROLE
This solo meal can be easily expanded, and because it uses transportable ingredients, this one dish meal can be made in a rustic setting or even in a dutch oven over campfire coals. An adventuresome cook might also consider using a crockpot.

Steps:
- Slice a washed, but not peeled potato, and mix thoroughly with diced onion and olive oil in bottom of a one and a half casserole dish.
- Follow with a layer of sliced Spam.
- Top with the pineapple.
- Mix mustard, pineapple juice and pepper in a small bowl and pour over the other ingredients.
- Cover, bake in a 400 degree (f) oven for 50 minutes or until the pototo is tender.
SPAM FRIED RICE
Spam fried rice is a popular dish in Hawaii. This version is quick and easy and a great way to use up leftover rice and pantry staples.

Steps:
- Heat the butter and oil in a large skillet over medium heat. When the butter has melted and the oil is hot, add the Spam and bell peppers. Cook until the Spam becomes crispy, about 5 minutes.
- Add the whites of the scallions, garlic, ginger and rice. Stir together and cook until the rice begins to crisp and brown, 3 to 4 minutes. Add the pineapple, peas, soy, honey and lime juice. Stir together and continue to cook until everything comes together, another minute. Add to a platter and sprinkle over the sesame seeds and reserved scallion greens.
- For the spicy BBQ aioli: Quickly mix together the mayonnaise, BBQ sauce, sesame oil and Asian chile sauce. Drizzle over the fried rice before digging in.

Everyone uses Spam once in awhile, right? I found this recipe a bit ago and have been waiting for the right event to make these. I love anything that is made into 'balls'! You know, I do feel an event coming on...very soon!

- 1. Preheat an oven to 350 degrees F (175 degrees C).
- 2. Mix together the meat, Cheddar cheese, baking mix, water, and cayenne in a large bowl. Form the mix into 1-inch balls and place on a greased baking sheet. Bake in preheated oven until golden brown, about 12 to 14 minutes. Serve warm.
- 3. NOTES: For some added zing, serve with dipping sauce made of 3 parts sour cream and one part Dijon mustard. Use the large holes of a cheese grater to grate the SPAM®.

- Set oven to 375 degrees.
- Grease a 12" x 8" baking pan.
- In a large mixing bowl, combine bread, milk, eggs, mustard, garlic powder and paprika.
- With electric mixer, beat at medium speed 1 minute, or until smooth.
- Stir in Spam, 1 cup cheddar cheese and chopped onion.
- Pour into prepared baking dish; bake 25 minutes.
- Remove from oven, top with remaining cheese, and Monterey Jack cheese.
- Bake for 5 minutes longer, or until cheese is melted.
- Let stand for 10 minutes befrore serving.

This recipe uses a quarter of a can of Hormel Spam to make a nice solo dish for one, but it can be expanded to feed a family of four. It goes well with a green salad and a glass of beer.

- Heat the olive oil and butter in a frying pan that has a tight fitting lid.
- Stir until the butter stops foaming.
- Add the onion and stir until nearly transparent.
- Add the pineapple cubes, rice, and Jalapeno Pepper.
- NOTE: If you want a milder dish, split the pepper in half and remove before serving.
- Stir until the rice grains are covered in oil/butter.
- Add chicken stock and pineapple juice, cover and reduce heat to lowest setting.
- After 15 minutes, remove from heat DO NOT PEEK and let sit for an additional 15 minutes.

TOASTED SPAM SANDWICHES
This is an easy-to-fix sandwich spread using Spam and Velveeta Cheese. My recipe does not call for onions, but some people do like to add chopped onion. I like to use bread instead of buns, because I prefer equal amounts of bread/spread. Use the buns for a bigger sandwich.
