Steps:
- Coat an ovenproof 10" skillet with cooking spray and place over medium low heat until hot. Melt the Smart Balance in the skillet.
- Add the onion, bell pepper, and zucchini and saute over medium-low heat until the vegetables are lightly browned, 2-3 minutes. Add the tomatoes, basil and black pepper tpo the skillet and stir to combine. Cook until the flavors are blended, 2 - 3 minutes, and remove from heat.
- Preheat the broiler. In a blender, combine the egg substitute, cottage cheese, and milk. Process until smooth. Pour the egg mixture over the vegetables.
- Cover and cook on medium low heat until bottom is set and the top is still slightly wet, 2-3 minutes.
- Transfer the skillet to the broiler and broil until the top is set, 2 - 3 minutes.
- Sprinkle with the cheese and broil until the cheese melts.

- In a small bowl, beat the eggs, pinch baking powder, cream, onions, garlic salt and pepper (if not using the garlic salt, season with regular salt).
- Heat butter in a 10-inch skillet over medium-high heat; add in the egg mixture.
- As the eggs set; lift the edges with a spatula, letting uncooked portion flow underneath.
- Sprinkle with ham, green peppers, tomato and mushrooms.
- When eggs are set (but moist), remove from heat, and fold omelet in half.
- Sprinkle with both cheeses; cover the frypan for about 1-2 minutes or until cheese has melted.
- Serve immediately.

- Spray microwave safe dish with butter spray.
- Put spinach in dish.
- Put cheese on top.
- Pour in egg whites.
- Microwave for 2 minutes - whites will start to puff up.
- Take out dish and stir.
- Microwave another minute - cook until looks dry on top.

SOUTH BEACH DIET SALSA OMELET
Steps:
- You can use as much or little of the ingredients that you want for the things that have no amounts listed.
- Take ham, onion, green peppers, & mushrooms and cook in a frying pan with a little water. After everything is cooked enough for your tastes put them on a plate. Take 2 eggs (or egg beaters whichever you prefer) and scramble in a bowl with a little water. Then spray pan with butter flavored spray and put in eggs. Spread to fit bottom of pan then cover it cooking on low heat. When eggs seem completely cooked, put cooked veggies on one side of the flattened egg, place half a slice of the cheese on top. Let it melt a little (you can put the cover back on so it will melt faster or just leave it there for a few minutes.) Then take a little salsa and spread on top of the cheese. Fold the side of the egg that has nothing on it over top of the veggies and cheese, then put the other half of the slice of cheese on top of the omelet. Take out of the frying pan and top with a little more salsa.
FLOURLESS CREPES
I am in the first phase of South Beach and wanted to find something that I could have for breakfast with my 1 yr old that was quick,easy (tasted good) and was more than just scrambled eggs. Plus as my mother-in-law is a celiac (can't eat anything with gluten), I'm always trying to create things for her enjoyment as well. I filled it with the SB mocha creme and it hit the spot. I plan to make later today with out the vanilla and splenda and maybe add a pinch of salt to use as a wrap for lunch. Hope you like it!

Steps:
- Wisk all ingredients together till frothy. (Maybe 15-20 strokes).
- Heat a small non-stick skillet or crepe pan coated with cooking spray over medium heat.
- Pour 1/3 of batter (about 1/8 of a cup) into pan and swirl to coat. You want the entire bottom of the pan evenly covered. (If there are 'holes' in your batter take a little of the batter to fill in.).
- Cook about 1 min until nicely set and slightly browned - the top will look cooked.
- Flip to brown the second side.
- Remove from pan onto waiting plate and repeat until batter is gone.
- Fill with your choice of toppings - fruit, ricotta cheese, etc -- .
