Steps:

  • For the gravy: Melt the butter in a small saucepan over medium heat. Add the flour and whisk to combine. Cook the flour until dark brown, 5 to 7 minutes. Add the stock and cook, whisking, until the mixture is smooth and thickened enough to coat the back of a spoon, 7 to 10 minutes. Stir in the sherry, Worcestershire, 1/2 teaspoon salt and some pepper, adjusting the seasoning to taste. Remove from the heat and cover by pressing a piece of plastic wrap directly onto the surface of the gravy, taking care to cover it completely to prevent a skin from forming. Set aside.
  • For the fries: Bake the French fries according to the manufacturer's instructions.
  • For the cheese sauce: Melt the butter in a small saucepan over medium heat. Add the flour and whisk to combine. Cook until the mixture resembles sand, about 3 minutes. Add the milk and cook, whisking constantly, until the mixture begins to boil and thicken, 2 to 4 minutes. Add the Cheddar and Gruyere and continue to cook, stirring, until the cheese is fully melted, another 2 to 3 minutes. Add the Worcestershire, 1/4 teaspoon salt and pepper to taste and remove from the heat. Cover in the same fashion as the gravy and set aside until the French fries are ready.
  • When the French fries are ready, transfer them to a serving platter. Drizzle the fries with the warm gravy and then with the warm cheese sauce. Serve immediately.

Steps:

  • Peel and cut potatoes into long thin strips.
  • In a large bowl combine water, sugar and corn syrup.
  • Add potatoes to bowl and soak for 30 minutes.
  • In a separate bowl mix potato starch, flour and milk.
  • Remove potatoes from water, and coat evenly in potato starch,flour,milk mixture.
  • Season potatoes with salt,pepper,paprika,garlic &onion powders and bouillon.
  • Heat lard in medium pan until fully melted.Place potatoes in pan and fry for 3 minutes turning once.Remove potatoes from lard and pat dry.
  • Place potatoes in Ziplock bag, and freeze for 1 hour or overnight.
  • Heat vegetable oil to 350, remove potatoes from Ziplock Bag, and fry in oil for about 7- 10 minutes or until potatoes are nicely golden brown.
  • Serve Hot.

  • While the fries are cooking, make the gravy. Melt the butter in a sauce pan and add the shallot and garlic. Season with sea salt and pepper. Cook until the shallot and garlic are softened. Sprinkle in the flour and cook, stirring, another 3 minutes. Slowly whisk in the beef stock while constantly stirring to avoid lumps. Add in the Worcestershire and season to taste with salt and pepper (if needed). Bring the gravy to a bubble and simmer 5-7 minutes until thickened. Remove from heat.
  • When the fries are done, remove them from the oven and evenly sprinkle with the shredded mozzarella cheese. Return to the oven 2-3 minutes until the cheese is melted. Pour the warm gravy on top and garnish with fresh parsley. Enjoy!
