SOUTHERN SAUCE
This sauce is great on just about anything. It can be used as a dressing, dipping sauce, and it can also be used for cheeseburgers.

Steps:
- In a small bowl, mix together the mayonnaise, mustard and sugar until well blended. I like to stir 50 times clockwise, and 50 times counter clockwise to get the sauce nice and thick.

SOUTHERN PEPPER SAUCE
Pepper Sauce is a Southern Condiment (Not to be confused with Hot Sauce) that is primarily used on Greens, Southern Peas and Cornbread and just about anything you want to add a bit of spice. I like to have some red and some green peppers so the bottle looks better on the table but that is optional. Wear plastic gloves when handling peppers. You can also add a teaspoon of Olive Oil if you like some extra heat.

Steps:
- Tightly pack a clean decorative Glass Jar (Empty Malt or Red Wine Vinegar Jars work great) with the peppers.
- Bring vinegar, salt and sugar to a boil over medium heat, stirring until salt and sugar are dissolved (about 3 minutes).
- Remove from heat and let stand for about 5 minutes.
- Pour hot vinegar mixture over the peppers.
- Leave about 1 inch from the top of the jar.
- If it starts getting low you can add a bit more of the Vinegar mixture.

This is my Mom's spaghetti recipe that has been my favorite since the age of three! Great for dinner parties! Serve over spaghetti and with a salad and garlic bread.

Steps:
- In a large pot heat olive oil. Add onions and simmer on medium heat until semi soft; stir in garlic. Be careful not to burn. Add ground beef and cook until all pink is gone; drain.
- In pot with drained beef, gently stir in tomato paste and tomato sauce. Mix in oregano, basil, Worcestershire sauce, sugar, red pepper flakes, mushrooms, bay leaves and salt; bring to a boil. Turn heat down to low and simmer for about 2 hours.

SOUTHERN STYLE MEAT SAUCE
My family and friends like this recipe because it is nothing like they have tasted before, the secret is to let it simmer 61/2 hours then refrigerate it overnight for the flavors to marinate. This is my recipe as I came up with it while experimenting with it one day and it was a hit with my family.

Steps:
- Brown ground beef, drain off all fat.
- Add onions and bell peppers and tomato products.
- Add salt, hot sauce, simmer for 5 hours this will be very thick, if you wish add a little water.
- Add chopped garlic cloves cook for 1 hour.
- Add Italian seasonings cook for 30 minutes to marinate all flavors.
- Put in the refrigerator for one day.
- This will enhance the flavors.
- Next day cook spaghetti and warm the meat sauce serve hot.
- I have used a crock pot after I brown the ground beef put all ingredients in the crock pot cook slow all day long.
