SOUTHWEST SALMON WITH CILANTRO-LIME SAUCE (COOKING FOR 2)

Salmon fillets are lightly seasoned, pan-seared to perfection and served with fresh cool sour cream, lime and cilantro sauce, all done in under 30 minutes.

Southwest Salmon with Cilantro-Lime Sauce (Cooking for 2) image

Steps:

  • In small bowl, mix sour cream, cilantro, lime peel, lime juice, honey and salt; set aside.
  • Season salmon fillets with taco seasoning mix. In 8-inch skillet, heat oil over medium heat. Add fillets to skillet, skin-side down.
  • Cook 6 to 8 minutes or until skin is browned. Turn fillets; cook 2 to 4 minutes or until salmon flakes easily with fork.
  • Serve salmon with cilantro-lime sauce.

1/2 cup sour cream
1 tablespoon chopped fresh cilantro leaves
1 teaspoon grated lime peel
2 teaspoons lime juice
1/2 teaspoon honey
1/8 teaspoon salt
2 salmon fillets, skin on (6 oz each)
1 tablespoon Old El Paso™ chicken taco seasoning mix (from 0.85-oz package)
1 tablespoon vegetable oil

SOUTHWEST SALMON SALAD

This is a delicious summery salad. The heat from the salmon and crunchy sweet chipotle tortilla strips are delish! You can tweak the spiciness of this dish depending on the amount of seasoning you add to your salmon. I recommend broiling the fish, but you can grill if you choose.

Steps:

  • Set oven rack to middle and preheat to broil. Lightly grease broiling pan.
  • In a medium bowl, place garlic salt, olive oil, cayenne pepper, paprika, and a pinch of black pepper. Mix well.
  • Rub cajun seasoning mixture on salmon filets.
  • Place filets in oven for 8 to 12 min or until salmon becomes flaky with a fork.
  • In a medium bowl, toss romaine, carrots, onions, avocado, almonds/tortilla strips and add a pinch of pepper.
  • Add Ranch dressing with chipotle pepper paste and stir until you have a creamy smooth southwest dressing.
  • Garnish with sliced lemon and drizzle with dressing and enjoy!

1 tablespoon(s) cayenne pepper

Southwest Grilled Salmon With Cilantro Lime Butter image

Steps:

  • For Salmon: Whisk together olive oil, cumin, chili powder and several chopped cilantro leaves, salt and pepper to taste.
  • Coat flesh side of fish heavily with oil mixture and allow to marinate in refrigerator for 2 hours.
  • Grill well marinated fish on high- skin side down- until just after fat begins to seep from salmon flesh.
  • Fish should be cooked through, but still very moist.
  • Before serving mix melted butter with juice from both limes and crushed and chopped cilantro leaves.
  • Pour over salmon and serve immediately.
  • This dish goes well with oven roasted asparagus or a tossed salad.
