Steps:

  • Cook and drain fettuccine as directed on package. Spray fettuccine 2 or 3 times with cooking spray, tossing after each spray. Remove from saucepan; cover to keep warm.
  • In same saucepan, mix remaining ingredients except cilantro. Cook over medium heat 4 to 6 minutes, stirring occasionally, until corn is tender.
  • Divide fettuccine among 4 bowls. Top each with about 3/4 cup sauce mixture. Sprinkle with cilantro.

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl combine oil, lime juice, chili powder, cumin, salt and garlic. Stir in pasta and set aside to cool to room temperature, stirring occasionally.
  • Stir in corn, beans, green pepper, red pepper and 1/2 of the cilantro leaves. Spoon onto a platter and garnish with tomatoes and remaining cilantro. Serve chilled or at room temperature.

  • In a small bowl, whisk the first 8 ingredients until blended. Cook pasta according to package directions. Drain pasta; rinse with cold water., In a large bowl, mix pasta, corn, beans, tomatoes, olives, peppers, onion and 1/4 cup cilantro. Pour dressing over salad; toss to coat. SOUTHWESTERN STYLE FETTUCCINE

Found this recipe in a magazine years ago. It's a nice twist on fettuccine alfredo -- using creamed corn as the base for the "alfredo sauce." RitaL suggested adding jalapeño peppers. I think this is a great idea. I'll be making this recipe next week (May, 06) and will try it with serrano or jalapeño chiles.

Steps:

  • Cook fettuccine until just tender, 8-10 minutes.
  • Drain and keep warm.
  • Meanwhile, purée cream-style corn and milk in blender or food processor. Set aside.
  • Heat oil in a large skillet over medium-high heat.
  • Add cumin, onion, and bell pepper.
  • Stir often until onion is soft (5 minutes).
  • Add water 1 tablespoon at a time if the pan is dry.
  • Stir in corn/milk, 10 ounces of corn, and cheese over medium heat until cheese melts.
  • Pour sauce over pasta; add cilantro; mix gently.
  • Garnish with cherry tomatoes. Season to taste with lime and salt.

  • Cook pasta according to package directions. Meanwhile, in a small bowl, beat cream cheese until smooth. Beat in milk. Stir in spinach and oregano; set aside. , In a nonstick skillet, cook beef over medium heat until no longer pink. Add garlic; cook 1 minute longer. Drain. Steps:

  • Peel sweet onions and cut into slices about 1/4-inch thick; separate slices into rings.
  • In a large deep skillet, heat olive oil over medium-low heat. Add onions, chicken, cumin, chili powder, salt and cayenne pepper and cook, stirring occasionally, until onions are soft and golden, about 25 minutes.
  • Stir in the tomatoes, corn and chiles and cook 2 minutes longer.
  • Pour in the chicken stock and increase heat to high. Cook, stirring occasionally, until the sauce thickens slightly, 5 to 10 minutes.
  • Combine the sauce, cooked pasta, cilantro and goat cheese, stirring and tossing to soften the cheese.
