CLASSIC FUDGE
Indulge in some melt-in-the-mouth fudge made with rich condensed milk. The perfect year-round treat, it's also great wrapped up as a gift for family and friends

Steps:
- Butter and line a 20cm square cake tin with baking parchment. Put the butter, condensed milk, sugar and milk in a large saucepan over a low heat. Stir continuously until the sugar dissolves.
- Increase the heat and bring to the boil. Bubble for 10 mins, stirring all the time until the mixture reaches 115C on a sugar or probe thermometer. Remove from the heat and leave to cool to 110C. Add the vanilla, then beat in a stand mixer or with an electric hand whisk until it cools to 60C. This will help break up any large sugar crystals. The fudge should be thick and matte-looking.
- Spoon the fudge into the prepared tin and press down with a spoon to smooth the surface. Leave to set, then cut into squares. Will keep for up to three weeks in an airtight container.

- In a saucepan combine sugar, cocoa, milk, shortening, and salt. Bring mixture to a rolling boil, stirring constantly for 2 minutes.
- Remove from heat and add vanilla and continue beating until frosting starts to thicken slightly. The frosting will be real creamy.

THE ORIGINAL FANTASY FUDGE
This recipe used to be found on the back of a well known brand of marshmallow cream. Many were surprised when it was changed. This is the original! You may find that most packages of chocolate chips are 10 ounces now; 12 ounces of chocolate chips is roughly 2 cups.

- Grease a 9x13-inch pan.
- Mix sugar, margarine, and evaporated milk in a large, heavy saucepan over medium heat, stirring to dissolve sugar. Bring mixture to a full boil for 5 minutes, stirring constantly.
- Remove from heat and stir in chocolate chips until melted and thoroughly combined. Beat in marshmallow creme, walnuts, and vanilla extract. Transfer fudge to the prepared pan and let cool before cutting into squares.

CHOCOLATE FUDGE BUTTERCREAM FROSTING

Steps:
- Cream together the butter or margarine with the shortening.
- Sift the cocoa with the confectioners' sugar and add to the creamed mixture. Mix together adding 1 tablespoon at a time of milk to keep mixture smooth. Don't add more than 1/4 cup of milk.
- Add the hot fudge topping and the vanilla extract. Blend until smooth and creamy.

- In 3-quart heavy saucepan, cook corn syrup, butter, salt and milk over medium heat 2 to 3 minutes, stirring constantly, until well blended. Reduce heat to medium-low; stir in cookie dough. - Line a 9x9" baking pan with aluminum foil, and spray lightly with non-stick cooking spray. Set aside.
- In a microwave safe bowl, add the chocolate chips and 1 can of the sweetened condensed milk. Heat on high for 1 minute, stir. Heat for 30 second increments, and stir until the chocolate chips have completely melted. Stir in the peppermint extract. Mixture will begin to thicken as it cools. Evenly press into the bottom of the prepared pan.
- To make the second pink layer, add the white chocolate chips and the second can of sweetened condensed milk. In the microwave, heat for one minute on high. Stir. Heat for 30 second increments, and stir until the chocolate chips melt completely. (Be careful not to overheat). Add the peppermint extract and a few drops of red food coloring, and stir until completely pink. Press on to the top of the chocolate layer.
- Top the fudge with the mini chocolate chips and peppermint crunch. Refridgerate for at least 2 hours before cutting. To make cutting easier, lift the fudge out of the pan by the sides of the foil. Cut into 1" squares.
