  • Heat the oil in a large deep frying pan, then fry the meatballs for 10 mins, turning occasionally until cooked through. Scoop out of the pan and set aside, then cook the onion for 5 mins, until softened.
  • Add the dried apricots, cinnamon stick, tomatoes and half a can of water to the pan, then bring to the boil and simmer for 10 mins. Remove the cinnamon stick. Return the meatballs to the pan and coat well with the tomato sauce. Serve sprinkled with the almonds and coriander.

Steps:

  • Preheat oven to 375.
  • In a large bowl, combine ground meats, panko, eggs, melted butter, and seasonings. Roll mixture into balls.
  • In skillet on medium-high heat, cook meatballs in some olive oil, until browned on all sides. Transfer to a paper towel lined tray and set aside.
  • In the same skillet, melt butter and whisk in the flour, until lightly browned. Slowly pour in the beef broth, while whisking continuously. Keep whisking and cooking until slightly thickened. Stir in the heavy cream and season with salt and pepper.
  • Place meatballs in the gravy and simmer for about 3-4 minutes.
  • Cook egg noodles to al dente and drain. In a baking dish, mix together with meatballs and gravy. Sprinkle with desired amount of shredded Gruyere cheese. Bake at 375° F until slightly golden and bubbling. Garnish with chopped chives or parsley.

  • Combine 1 envelope of soup mix with ground beef, bread crumbs, milk and egg in a large bowl.
  • Mix Well.
  • Shap into 24 meatballs.
  • Brown meatballs in a large skillet. Pour off fat from skillet. Return all meatballs into skillet.
  • Blend remaining envelope soup mix with water & spices. Add meatballs.
  • Simmer, scovered 20 minutes or until meatballs are cooked thru.
  • Blend sour cream with flour; stire into skillet and heat through, do not allow the sauce to boil.
  • Server over buttered parleyed egg noodles.

Steps:

  • 1. Combine egg, 1/2 soup mix, milk, bread crumbs and ground beef. Form small 1" balls. Brown balls a few at a time in the hot cooking oil in skillet. Drain off any fat. Add remaining soup, spices, and water. Cover and simmer for 20 minutes.
  • 2. In small bowl, stir together the sour cream and flour. Stir into the mixture in the skillet. Cook and stir until slightly thickened and bubbly. Cook and stir a minute more. Serve with hot noodles. You can put the thickened meatball mixture in the oven while preparing the rest of the meal to keep it warm. ENJOY!

1 pkg regular onion/mushroom soup mix; divide and save half for later
1/3 c milk
1 c soft bread crumbs; a blender works great
1 1/2 lb ground beef (better with less fat)
2 Tbsp oil
other half of soup mix
1/4 tsp all spice or sweetened paprika

8 oz sour cream
2 Tbsp flour

Steps:

  • Preheat oven to 350ºF (175ºC).
  • In a large bowl, whisk together the egg and the milk. Add the beef, cream of wheat and onion and mix well. Shape into 1 inch balls. Place balls on a lightly greased baking sheet.
  • Bake at 350ºF (175ºC) for about 20 minutes.
  • Drain meatballs on paper towels, if needed. Then place meatballs in a lightly greased 2 quart casserole dish. In a separate medium bowl, combine the soups with the evaporated milk, stirring until smooth. Pour over the meatballs.
  • Bake uncovered at 350ºF (175ºC) for another 40 minutes. Sprinkle with parsley with parsley before serving.

THE BEST MEATBALLS

I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
  • Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

Green Beans and Cabbage 'Scandia' image

Steps:

  • Wash, trim, slice and steam the green beans.
  • Save 2/3 cup of the cooking water.
  • Cool the beans in cold water to prevent them from cooking more from their own heat.
  • Chop the cabbage, and set both vegetables aside.
  • In a double boiler, melt the butter with the vinegar, sugar, bouillon cube, dill, salt and pepper to taste, and add the cornstarch mixed with a little cold water (about 1 tbsp.) Cook until the sauce thickens, stirring constantly, then thin it with the bean cooking water.
  • Add the cabbage and cook it for 5 to 10 minutes, stirring frequently, then add the beans.
  • Stir well to be sure the vegetables are well coated in the sauce. Thin with a little more water if needed.
  • Heat through and serve.

  • Boil the potatoes for 10 mins until tender. Meanwhile, heat the oil in a large saucepan. Season the meatballs, then brown them all over for about 5 mins. Remove from the pan, drain off any excess fat, then add the onion, garlic and rosemary. Fry gently for 5 mins.

  • In a large bowl, whisk together the egg, basil, parsley, oregano, salt, pepper, garlic and water. Add the meat, breadcrumbs and cheese and mix until just combined (your hands are the best tool). Do not overwork it.
  • Roll the mixture into golf ball-sized meatballs and place on an ungreased baking sheet. Bake for about 10 minutes, then remove the baking sheet from oven and use a metal spatula to turn the meatballs (they will stick a bit but should release easily when you scrape under them with the spatula).   • In the meantime, bring the marinara sauce to a simmer in a large skillet.
