Steps:

  • Place chickpeas in large saucepan with enough water to cover by several inches. Add onion cut in half (with cloves) and bay leaf. Bring to a boil, lower heat to a simmer and cook 1 hour, until about halfway cooked. In the meantime, heat oil in large Dutch oven over medium high heat. Season chicken thighs with salt and pepper and place chicken pieces, skin side down, in hot pot. Cook until evenly golden brown, about 5 minutes, then flip over and cook other side 5 minutes. Remove chicken from pan and set aside. Pour off all but 2 tablespoons fat from the pan and add diced mountain ham or bacon. Cook 5 minutes until crisp. If using bacon, drain excess fat. Add chopped onion, garlic, and saffron and stir. Cook until onions start to soften, then add white wine and scrape bottom of the pot to loosen any browned bits. Add carrots, celery, cabbage, salt and pepper. Remove onion halves from chickpeas and add half cooked chickpeas and their cooking liquid to pot along with the 6 cups of stock or water. Bring pot to a boil, lower heat and simmer 45 minutes to an hour or until chicken and chickpeas are completely cooked. Stir in parsley and serve.

1 cups dried chickpeas, soaked overnight in cold water
2 large onions, peeled: one cut in half and stuck with 2 cloves, the other chopped

Taste and adjust seasoning. Serve garnished with cilantro.

Steps:

  • In a mini food processor or a blender, combine the garlic, oregano, cumin seeds, coriander, and pepper flakes. Add the vinegar and grind to a paste. In a thin stream, drizzle in the olive oil and blend until the mixture is emulsified. Set aside while you cook the carrots. In a medium heavy saucepan, heat the olive oil over medium-high heat. Add the carrots and cook, stirring occasionally, for 3 to 4 minutes or until beginning to soften. Add the water, sugar (if desired), salt, and pepper and cover the pan. Reduce the heat to medium-low and cook, shaking the pan occasionally, for about 5 more minutes, or until the carrots are just tender but not mushy. Add a little more water to the pan if necessary. Transfer the carrots to a serving bowl with a slotted spoon and immediately add the herb dressing. Toss together and cover the bowl with plastic wrap. Leave the carrots to marinate for 2 to 3 hours, and when ready to serve, stir in the parsley. Serve at room temperature, on tiny plates or ramekins.

4 large cloves garlic
1/2 teaspoons dried oregano, crumbled
3/4 teaspoon cumin seeds
1 teaspoon ground coriander
1/2 teaspoon red pepper flakes
3 tablespoons sherry vinegar
1/2 cup olive oil, for the dressing, plus 2 tablespoons for carrots
2 pounds long, tender young carrots, cut into 3/4inch slices on the diagonal
3 tablespoons water, or as needed
Pinch of sugar, if desired
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 small bunch flat-leaf parsley, leaves only, finely chopped

Carrot Soup with Bacon and Dill Dumplings image

Steps:

  • Prepare the dumplings: Cook bacon in a skillet over low heat until tender, not crisp. Add onions, salt, and pepper. Cook over low heat until onions are soft, about 7 to 10 minutes. Reserve.
  • Place chicken in a food processor fitted with the metal blade, along with the allspice, potato and egg. Process until chicken is ground, about 2 minutes. Add the cream and process until mixture is thick and sticky. Stir in the reserved Sauteed onion and bacon, along with the dill. Place mixture in a bowl, cover, and refrigerate for 30 minutes.
  • Meanwhile, prepare the soup: Melt butter over medium-low heat in a large stockpot or Dutch oven. Cook onions with salt and pepper until soft, about 5 minutes.
  • Add the chicken stock and cook over moderate heat, uncovered, about 15 minutes. Meanwhile, finely chop carrots in a food processor fitted with the metal blade. Add carrots to soup. Bring to a boil, return to a simmer, and cook, uncovered, until the carrots are soft, about 10 minutes.
  • Puree soup in a blender or food processor until smooth. Strain back into pot, pressing with the back of a ladle to extract all the juices. Shape dumplings with 2 oval soup spoons dipped in hot water or with slightly wet hands. They should be ovals or balls, about 1 1/2-inches in diameter. Drop dumplings carefully into simmering soup and cook for 5 to 6 minutes or until they float to the surface. Add milk, bring to a boil and remove from heat. Serve immediately.

4 strips bacon, cut in small squares
1 onion, finely chopped
1 teaspoon salt
1 teaspoon black pepper
1 (6 ounce) boned chicken breast, fat and sinews removed, cut into chunks
1/2 teaspoon ground allspice
1 large potato, peeled, boiled, riced (about 3/4 cup)
1 egg
1/4 cup heavy cream
1/2 cup minced fresh dill
2 tablespoons unsalted butter
1 1/2 onions, sliced
2 teaspoons salt
1/2 teaspoon black pepper

SPICED CARROT SOUP / M MILLIKEN & S FENIGER

1996 recipe from their L.A. restaurant and TV Food Network show. Had it at the restaurant and it's fabulous! The recipe for Recipe #108334 can be found at: http://www.recipezaar.com/108334 Addendum, Oct 2008: The photo came from a recipezaar chef who made this as part of PAC 2008 ... and I agree with her comment -- this is much thicker than I remember the soup I was served at their restaurant and I would definitely have added some water or veg stock to thin it out. The consistency I remember it having was like a tomato bisque ... it would coat a spoon, but drip off over about 30 sec, leaving the spoon clean. The texture was as if 75-80% of the ingredients had been pureed and a small amount left intact for mouth feel. Feel free to adjust the liquid so your product has that consistency ...
