SPINACH AND BASIL ORZO
Steps:
- Saute garlic and onion in olive oil over medium-high heat for 3 minutes until slightly tender. Add orzo and chicken stock, cover and cook for about 3 minutes on medium heat. Add basil and rosemary and cover and let simmer for about 5 minutes until all liquid has evaporated. Turn heat to low add lemon juice and spinach, stir to combine and cook for 1 minute until spinach is heated through. Serve and Enjoy!

- Bring a large pan of salted water to a boil. Add the orzo and cook until tender, according to the package instructions. Meanwhile, heat the olive oil in a large saucepan over medium heat. Add the onion and cook, stirring often, about 3 minutes, until softened. Stir in the garlic, coriander, cumin, and cayenne, if using, and cook for 1 minute more. Stir the spinach (with the water clinging to its leaves from washing) into the saucepan. Cook, stirring often, for 3 minutes, or just until wilted. Drain the orzo well, shaking off any excess water. Add the orzo to the spinach mixture and mix well. Stir in the cilantro and season with salt and pepper. Transfer to a serving bowl. Serve hot or cooled.

- Add the garlic, Italian seasoning, and orzo. Cook for 2-3 minutes, stirring often (this infuses the orzo with more flavor and toasts it a bit).
- Stir in the chicken broth and cream. Once it starts to bubble, continue cooking for 10 minutes, stirring fairly often. You will likely need to turn the heat down a bit (to medium or even medium-low). You want it to gently bubble vs. furiously boil, and you don't want the liquid to reduce too much before the pasta has cooked.
- Take the pot off the heat, stir in the parmesan and spinach, and cover the pot for 3-5 minutes or until it has thickened up to your liking. The orzo will absorb the liquid quickly, so if it still seems like there's too much liquid, just wait a little bit longer. Season with salt & pepper as needed.
