SPICED TURKEY STEW (LEFTOVER)

A really easy casserole dish using leftover turkey with warming flavours of cardamom, coriander and fennel. Serve with mashed potatoes and vegetables or plain rice.

Spiced Turkey Stew (Leftover) image

Steps:

  • Thoroughly mix all the ingredients and place in an ovenproof casserole dish.
  • Put in a pre-heated 350°F oven for 45 mins to an hour, stirring once.
  • Serve.

1 large onion, very finely chopped
1 tablespoon ground coriander
1 teaspoon ground cardamom
1 teaspoon crushed fennel seed
14 ounces chopped tomatoes with juice
1 teaspoon salt
1 teaspoon sugar
2 tablespoons cranberry sauce
2/3 cup water
1 lb cooked turkey, leftovers

Turkey breast meat and fresh vegetables are cooked up into a hearty stew that may be enjoyed any time of year.

Hearty Turkey Stew with Vegetables image

Steps:

  • Melt the butter in a pot over medium heat. Place onions in the pot and cook until tender. Stir in celery and carrots, and cook until tender. Stir in the potatoes and flour. Pour in the chicken stock, and season soup with marjoram. Place turkey in the pot, and bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.
  • Mix the green bell pepper into the soup, and continue cooking 10 minutes, until pepper is tender.
