BOB'S RED MILL SPICE APPLE BRAN MUFFINS

The recipe listed on the back of the Spice Apple Bran Muffin Mix bag, with a few additions of my own. I love to tweak recipes to my liking, and I love that I can store the recipe for later here on Food.com because it is so hard to remember what I did sometimes! Anyways, my husband and daughter and I all love grab 'n go snacks, and these are very healthy!

Steps:

  • Preheat oven to 375°; grease muffin tin.
  • In a mixing bowl, beat eggs; add in milk, brown sugar, oil, and vanilla; blend well.
  • Add in bran cereal, apples, raisins, and walnuts; stir to mix well.
  • In another mixing bowl, combine the remaining ingredients; mix well.
  • Add bran mixture to flour mixture; stir just until blended.
  • Spoon batter into prepared muffin pans, dividing evenly.
  • Bake at 375° for 20 minutes or until firm to touch.

Apple Bran Muffins image

Steps:

  • In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. Combine dry ingredients; stir into apple mixture just until moistened. Refrigerate in a tightly covered container for at least 24 hours (batter will be very thick). Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.
