SWEET & SPICY ASIAN CHICKEN PETITES

We love Asian flavors and finger foods. Using chicken, crescent rolls, Sriracha and chili sauce, I made an appetizer that encourages second helpings. -Jeanette Nelson, Bridgeport, WV

Sweet & Spicy Asian Chicken Petites image

Steps:

  • Preheat oven to 375°. In a large skillet, heat 2 teaspoons olive oil over medium-high heat. Add red pepper, green onions and garlic; cook and stir 3-5 minutes or until vegetables are tender. Stir in chicken, teriyaki sauce, grapefruit juice, sesame oil and chili sauce. Remove from heat; cool slightly., Unroll crescent dough into one long rectangle; press perforations to seal. Roll dough into a 12-in. square; cut into sixteen 3-in. squares. Place 1 tablespoon chicken mixture in center of each square. Bring edges of dough over filling, pinching seams to seal; shape into a ball., Place on ungreased baking sheets, seam side down. Brush tops with remaining olive oil; sprinkle with sesame seeds. Bake 10-12 minutes or until golden brown. Serve warm with sweet chili sauce. Freeze option: Freeze cooled appetizers in resealable plastic freezer bags. To use, reheat appetizers on a baking sheet in a preheated 375° oven until heated through.

4 teaspoons olive oil, divided
1/3 cup finely chopped sweet red pepper
3 green onions, finely chopped
2 garlic cloves, minced
1 cup finely chopped cooked chicken breast
2 tablespoons island teriyaki sauce
1 tablespoon white grapefruit juice or water
1 tablespoon sesame oil
1 teaspoon Sriracha chili sauce
1 tube (8 ounces) refrigerated crescent rolls
2 teaspoons sesame seeds
Sweet chili sauce

ASIAN STYLE CHICKEN LOLLIPOPS

The possibilities are endless with chicken lollipops...you can make them into anything that you would normally make a regular chicken wing into BUT they are easier,less messy and fun to eat.P.S. this is not my picture...I pull the meat further up the bone to extend over the end actually.

Steps:

  • Make chicken lollipops as I have instructions for on my basic chicken lollipop recipe or check on you tube for instructional video if you are confused.
  • whisk five spice,sesame oil,soy sauce,rice wine,oyster sauce,chili flakes together and pour over chicken in a non reactive bowl and toss to coat, cover and refrigerate to marinate for 6 hours or more.
  • when ready to cook , heat oil.
  • Add cornstarch to the bowl with the chicken and marinade and toss well to coat. Fry each piece until golden brown and juices are clear. Set on paper towel to drain.
  • Heat Hoisin sauce in microwave until warm then put all chicken wings in clean large bowl and gently toss with warm hoisin sauce...removed to serving dish and sprinkle with sesame seeds and chopped scallion.

10 - chicken wings(separated and wingtip discarded)
3/4 teaspoon(s) chinese five spice powder
3 1/2 tablespoon(s) light soy sauce
3 1/2 tablespoon(s) rice wine
1 1/2 tablespoon(s) oyster sauce
1 pinch(es) chili pepper flakes
2-3 - drops of sesame oil(optional)
1/2 cup(s) cornstarch
- oil for frying(about 3 cups)
TO BE USED AFTER INITIAL FRYING
3 tablespoon(s) hoisin sauce
- 1-2 tablespoons sesame seeds
2 - scallion stalks cut up

  • Using a pair of scissors or knife, cut the skin and tendons around the base of each drumette. Peel, scrape and push the meat down to the thick end, from top to bottom making into a ball of lollipop shape. Cut off the knuckle end with scissors or knife. Repeat with remaining chicken drumettes.
  • In a bowl, prepare the Marinade ingredients. Add in the chicken drumettes, coat well and marinate for at least 1 hour, or best overnight.
  • Preheat the oven to 350°F (176°C). Arrange the chicken drumettes on the wire rack set over a baking pan. Bake until the chicken is nicely browned and slightly charred, and completely cooked through, for about 35 minutes.
  • Serve with the dipping sauce of your choice. They are delicious as is without any dipping sauce.
