- In a large resealable plastic bag, combine the first eight ingredients; add the potatoes. Seal bag and toss to coat. Arrange in a single layer on greased baking sheets. , Bake at 400° for 30-35 minutes or until potatoes are tender and golden brown, turning once.

SPICY POTATO WEDGES
These potato wedges taste awesome!! They have just the right amount of spice to be hot, but not overwhelmingly hot. I like that they are baked and not deep fried so it cuts out a lot of the fat, they are super simple to make, and taste great.

Steps:
- Preheat oven to 425 degrees.
- Combine potatoes and oil in a large bowl or plastic bag, tossing well to coat.
- Combine salt, garlic powder, and red pepper in a small bowl.
- Sprinkle salt mixture over potatoes, tossing well to coat.
- Arrange potatoes in a single layer on 2 baking sheets coated with cooking spray.
- Bake at 425 degrees for 25 minutes. Turn potato wedges over, and rotate pans; baking an additional 20 minutes or until golden brown.

GINA'S SPICY POTATO WEDGES

Steps:
- Preheat oven to 450 degrees F.
- In a large bowl, toss the potatoes with the melted butter, olive oil, seasoned salt, cayenne, parsley, and 3 tablespoons of the Parmesan.
- Arrange in a single layer on 2 sheet trays. Bake until golden brown and crisp, about 45 minutes. Turn the potatoes halfway through the cooking with flat spatula.
- Remove from oven and taste for seasoning. Add some kosher salt to taste and transfer to a serving platter. Garnish with more Parmesan and serve.

These are good as a side or just by themselves with some ketchup or other dipping sauce. I am using a two-heat system to cook them in the oven and a really yummy spice mixture. And, to be honest, baked taters tastes great, and they are good for you. So, you ready... Let's get into the kitchen.

- 1. PREP/PREPARE
- 2. I find that red or golden potatoes (waxy variety) work best for this recipe. You can use russets; however, keep a close eye on them while baking, so they do not wind up falling apart.
- 3. If you do not have any dehydrated onions, you can sub some garlic powder (not garlic salt) but use just 1/2 teaspoon. If you want a salty crunch, substitute the fine grind kosher salt with flaky sea salt.
- 4. Gather your ingredients (mise en place).
- 5. Soak the potato wedges for about 30 minutes in ice water.
- 6. While the taters are soaking, place a rack in the middle position, and preheat the oven to 375f (190c).
- 7. Dry the potatoes off.
- 8. Toss with the oil and dry spices, and place on a parchment-lined baking sheet.
- 9. Add to the preheated oven and bake for about 20 minutes.
- 10. After 20 minutes, toss the fries, increase the temperature to 425f (220c), and bake until golden brown, about 20 - 25 additional minutes.
- 11. PLATE/PRESENT
- 12. Serve as a side dish, or by themselves with your favorite dipping sauce. Enjoy.
- 13. Keep the faith, and keep cooking.
