SPICY DANDELION OMELETTE
Dandelions: Can't beat 'em? Eat 'em! A quick and recipe using Dandelion flowers. Make sure the place where you get your Dandelions hasn't been sprayed with any chemicals. You need the yellow flowers, not the white round ones. Cut at the stem right below the flower head. Rinse them in water. Two cups isn't really a lot because the flowers shrink when you cook them. If you want you can also add pieces of meat such as ham or sausage. Enjoy!

Steps:
- Heat the olive oil.
- Saute the mushrooms, onions, dandelions and peppers in Medium Heat for about 5 minutes.
- Take them out of the pan, let them cool a bit, and mix them with the beaten eggs in a bowl. Keep the pan hot.
- Pour them altogether in the pan, forming a nice circle. Add Garlic salt to taste. Let it cook in medium heat.
- Once the egg is done and the omelette is solid enough, make a fold on one end then roll it up.

When the eggs are set; fold in half. Invert omelet onto a plate to serve. Sprinkle with red pepper flakes.

- Cream together the shortening and sugars.
- When light and fluffy, add the vanilla and egg. Beat well.
- Mix in all the dry ingredients, including the dandelion petals.

BASIC OMELETTE
This is a very simple omelette for one. If you are going to add any fillings, make sure to prepare them ahead of time. Feta cheese and dill is a favourite of mine.

- Crack the eggs into a small bowl and whisk.
- Add some salt and pepper, if you like, but do not add any water, milk, or any other liquids.
- Heat the oil or butter in a 9-inch non-stick frying pan and pour in the eggs.
- In the first 30-seconds of cooking, use a spatula to create 6-10 small cuts through the omelette.
- This allows the uncooked egg on the top to flow down to the bottom of the pan.
- When the top is nearly set, sprinkle any fillings over half of the omelette and turn off the heat.
- Don't worry if some of the egg in the very centre isn't quite set, because the ambient heat will soon cook it.
- Use your spatula to flip one half of the omelette over the other and serve immediately.

SPICY OMELETTE
This is my own concotion. It's kind of an elementary recipe, really kind of goofy actually but I absolutely love omelettes and I have been working on this one for a while, adding imgredients and taking them out.

- Mix eggs, milk, salt and pepper and tabasco together and whisk into a froth. Go overboard if you want, the fluffier the eggs are the better they seem to taste (IMNSHO).
- Once eggs are in frying pan and cooking for a minute, add sausage.
- Right before folding eggs into omelette, add cheese so it doesnt get too melted. Use whatever kind of cheese you like. I usually use sharp cheddar, but you can use a mexican blend or I sometimes use Monterey Jack.
- Add two pieces of toast and a nice cup of chickory coffee and you've got a pretty good breakfast!

SPICY BAKED OMELET
I wanted something a little different for breakfast this morning and I came up with this one. It's fast and easy and requires no overnight refrigeration time. We really enjoyed the spicy taste the Rotel added.

- Preheat oven to 400 degrees F.
- Spray an 8 1/2 x 8 1/2 in baking dish with Pam.
- Beat the eggs with the salt and pepper until foamy.
- Mix in the cubed ham, Rotel and cheese and mix well.
- Bake in the oven for 25-30 minutes or until the eggs are set (every oven is different).
- Turn the oven off and let it sit another 5-10 minutes.
- Delicious and easy.

- Wash and chop the dandelion greens leaves; set aside. Chop the red onion and finely chop the shallot. Whisk together the eggs in a medium bowl.
- Heat half the ghee or butter in a medium skillet over medium heat. When the ghee shimmers in the pan, toss in the chopped onion and shallot and sauté for 3-4 minutes just until they start to brown. Add the dandelion greens and sauté for another minute.
- Push the sautéed veggies to one side of the skillet, add the rest of the ghee and use a spatula to coat the bottom of the pan. Redistribute the veggies evenly in the skillet and then pour in the eggs on top. Cook the eggs for a few minutes or until set and then carefully fold one half of the omelette onto the other. Cook for about 30 seconds, flip the omelette and cook 30 seconds on the other side.
