Spicy Grilled Shrimp and Sausage Skewers W/Creole Mustard Dippin image

Steps:

  • To prepare sauce: Combine mustard, orange marmalade and Tabasco sauce in small bowl. Set aside.
  • To prepare skewers: Cover bamboo skewers with water; soak for at least 30 minutes.
  • Preheat grill or broiler.
  • Trip tops and white bottoms from green onions. Blanch green onions in boiling water for 30 seconds.
  • Drain skewers. Thread 2 shrimp and 1 sausage slice onto each skewer, twisting a strip of green onion around each skewer. Brush shrimp with Tabasco sauce.
  • Cook skewers 5 to 8 minutes or until shrimp are cooked through, turning once. Serve with sauce.

Amazing Spicy Grilled Shrimp image

Steps:

  • Whisk together the olive oil, sesame oil, parsley, hot sauce, minced garlic, ketchup, chile sauce, salt, pepper, and lemon juice in a mixing bowl. Set aside about 1/3 of this marinade to use while grilling.
  • Place the shrimp in a large, resealable plastic bag. Pour in the remaining marinade to use while grilling.
  • Preheat an outdoor grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 2 minutes per side until opaque, basting frequently with reserved marinade.

Grilled Shrimp and Sausage Skewers with Smoky Paprika Glaze image

Steps:

  • Whisk oil, garlic, thyme, smoked paprika, Sherry wine vinegar, salt, black pepper, and crushed red pepper in medium bowl to blend for glaze. Transfer half of glaze to small bowl and reserve for serving.
  • Alternately thread shrimp, sausage pieces, cherry tomatoes, and sections of onion wedges on each of 6 long metal skewers. Arrange skewers on large rimmed baking sheet. DO AHEAD: Can be made up to 6 hours ahead. Cover and chill skewers and bowls of glaze separately.
  • Coat grill rack with nonstick spray and prepare barbecue (medium-high heat). Brush skewers on both sides with glaze from 1 bowl. Grill until shrimp are opaque in center, turning and brushing occasionally with more glaze, 6 to 8 minutes.
  • Arrange skewers on platter. Serve with remaining bowl of glaze.

Steps:

  • Soak wooden skewers in water for about 30 minutes prior to preparing shrimp.
  • Peel and devein shrimp.
  • Rinse shrimp with cool water, and set aside, to drain excess water.
  • Whisk together all ingredients except for shrimp.
  • Let mixture stand for about 5 minutes.
  • Add shrimp to mixture and let marinate for approximately 30 minutes.
  • Prpare grill on medium-high heat.
  • Thread shrimp on wooden skewers.
  • Remove shrimp from marinade and place on grill.

Pat shrimp dry with paper towels then toss in a large bowl with oil and 1 Tablespoon Cajun seasoning. Slice Andouille sausage the same thickness as the shrimp then tuck sausage slices between the curve of the shrimp and skewer (I fit three shrimp and sausage slices on each skewer.)
  • Combine mayonnaise, remaining Tablespoon Cajun seasoning, and lemon juice in a bowl then mix to combine. Store in refrigerator (can be done 1-2 days ahead of time.)
