SPICY LEMON GARLIC SHRIMP

Spicy Lemon Garlic Shrimp image

Steps:

  • Preheat the oven to 375 degrees F. Rinse the shrimp to separate, and then arrange in a single layer on a baking sheet.
  • To the bowl of a food processor, add the butter, parsley, salt, red pepper, garlic and lemon juice. Pulse until combined. Sprinkle the cold butter crumbles over the shrimp.
  • Bake until the shrimp is opaque and the butter is hot and bubbly.
  • Serve with hot crusty bread. Peel and eat the shrimp, and then encourage guests to dip the bread into the butter in the bottom of the pan.

2 pounds raw frozen shrimp, deveined, shells on
2 sticks cold butter, cut into pieces
1/4 cup fresh parsley leaves
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper
4 cloves garlic, peeled
1 whole lemon, juiced
Crusty bread, for serving

Steps:

  • Combine everything but the parsley leaves in a disposable foil pan. Cook over the hot side of the grill, stirring occasionally, until the butter melts, about 1 1/2 minutes; transfer to the cooler side of the grill. Proceed to grill your shrimp on the grill. Remove cooked shrimp to sauce, adding parsley just before serving.

4 tbsp unsalted butter, cut into 4 pieces
4 tbsp juice from 2 lemons
1/2-3/4 tsp red pepper flakes
3 medium garlic cloves, minced
1/8 tsp salt
1/3 cup minced fresh parsley leaves.

Lemon-Garlic Sauce image

Steps:

  • Place garlic and shallots in a small, heavy saucepan. Add wine and simmer slowly until reduced by half and shallots and garlic are soft, about 10 minutes. Remove from heat and stir in lemon juice.
  • Gradually whisk in egg yolks, return to stove and cook, whisking constantly over medium heat, until mixture thickens to the consistency of heavy cream. Do not allow to boil or eggs will curdle.
  • Dissolve cornstarch in 1 tablespoon cold water. Whisk into pan and cook until sauce thickens. Slowly but vigorously whisk in olive oil. Add stock, adjusting the quantity to make the sauce thicker or thinner as desired. Strain sauce into a clean saucepan, pressing on the solids. Season with salt and pepper and add additional seasonings to taste, if desired.
  • To serve hot, reheat, but do not boil. Sauce may also be served at room temperature or chilled.

  • In a greased 3-qt. slow cooker, combine the onion, water, lemon juice, oil and seasonings. Add chicken; turn to coat. Cover and cook on low for 4-5 hours or until a thermometer reads 170°. Pepperoni Pasta With Lemon and Garlic image

Steps:

  • Bring a large pot of well-salted water to a boil. Add pasta and cook, according to package directions, until about 2 minutes shy of al dente so that the pasta can finish cooking in the sauce. Reserve 1 cup of the pasta cooking water, then drain the pasta.
  • While the pasta is cooking, in a large skillet or Dutch oven, heat oil over medium. Add pepperoni and cook, stirring occasionally, until crisped and brown, 3 to 4 minutes.
  • If the pan looks dry, drizzle in a little more oil. Add garlic, fennel seeds, red-pepper flakes (if using) and a large pinch of salt, and cook until garlic is lightly golden, 2 to 3 minutes. Add tomato paste and cook until it darkens, about 1 minute.
  • Add the drained pasta, lemon zest and 3/4 cup of the reserved pasta water to the skillet. Stir until the pasta is al dente and well coated with the sauce. Add more pasta water, if needed, until the sauce is glossy and the pasta is cooked to taste.
  • Cut the zested lemon in half and squeeze some juice into the pasta. Stir in herbs and taste, adding more lemon juice and salt, if needed. Cut the remaining half lemon into wedges and serve it alongside the pasta, which should be garnished with more herbs and a drizzle of oil, and sprinkled with Parmesan, if you like.
