LEMON & GARLIC SPINACH

This recipe was a side dish at a restraunt we ate at. I ate so much I couldn't finish my salmon. The spinach is not cooked so the flavor is very fresh. Since finding this recipe we have gone through 5 pounds of spinach!! (in 2 weeks)

Lemon & Garlic Spinach image

Steps:

  • In large pot, add olive oil, butter, garlic and the juice of 1/2 lemon. (you may adjust olive oil/butter/lemon to your liking).
  • Let cook over low heat for about 20 minutes so the flavors meld.
  • Take off heat, add spinach, toss well and serve.

1 (24 ounce) bag Baby Spinach
1 1/2 lemons, juice of
4 -6 garlic cloves (finely chopped)
2 1/2 tablespoons butter
3 tablespoons olive oil

Spicy Lemon Spinach image

Steps:

  • Wash spinach (tough stems removed), leaving some water clinging to leaves. In a large skillet, heat oil and pepper flakes over medium-high. Add spinach to skillet in 3 batches, stirring to partially wilt before adding next batch, and lightly sprinkling with salt and pepper. Cook briefly until completely wilted, about 4 minutes total.
  • Place a colander in sink; transfer cooked spinach to colander, and press out any excess liquid. Divide spinach among 4 plates, and drizzle lemon juice over top. Serve.

1 tablespoon olive oil
1/4 teaspoon red-pepper flakes
2 bags (10 ounces each) fresh curly spinach
Coarse salt and ground pepper
2 to 3 teaspoons fresh lemon juice

Lobster Salad with Spicy Lemon Dressing image

Steps:

  • Make dressing:
  • Combine all the ingredients except the oil. When the salt is fully dissolved, add oil.
  • Yield:
  • 3/4 cup (150 ml).
  • Make salad:
  • 1. Have ready a large saucepan of boiling water (enough to cover the lobster) and a bowl of iced water. Add a pinch of sea salt to the boiling water and scald the lobster over high heat for 4 minutes. Plunge the lobster into the iced water, then remove the meat from the shell. Cut into bite-size pieces.
  • 2. Bring about 1 inch (2.5 cm) of oil in a small saucepan to 320°F (160°C). Deep-fry the garlic slices until crisp.
  • 3. Lightly grill the mushroom caps.
  • 4. Arrange the salad greens, mushrooms, and lobster on a serving dish. Pour the Spicy Lemon Dressing over all and decorate with the garlic chips.

For Spicy Lemon Dressing
1/4 cup (50 ml) lemon juice
1 tablespoon plus 2 teaspoons soy sauce
1/2 teaspoon finely grated garlic
1/4 teaspoon chili garlic sauce, passed through a sieve
1/2 teaspoon sea salt
a little freshly ground black pepper
4 tablespoons plus 2 teaspoons grapeseed oil
For Lobster Salad
1 fresh lobster
sea salt
vegetable oil for deep-frying
2 cloves garlic, thinly sliced
5 shiitake mushrooms, stems removed
3 ounces (80 g) assorted salad greens (i.e., mizuna , rocket leaves, baby spinach, mustard greens, lollo rosso lettuce, tomyo pea sprouts, Swiss chard)
1/4 cup (50 ml) spicy lemon dressing
