SWEET AND SPICY PORK AND NAPA CABBAGE STIR-FRY WITH SPICY NOODLES
The Thai sweet chili sauce gives this dish a sweet and spicy flavor that my kids love. You can adjust the heat level by adding more or less of the sauce or adding additional red pepper flakes, if you like it really hot.

- Whisk together the 3 tablespoons soy sauce, 3/4 cup sweet chili sauce, 1/2 teaspoon garlic powder, the ground ginger, and the sesame oil in a large bowl; add the drained Chinese noodles and toss to coat; set aside

Stir in 3 tablespoons sweet chili sauce, the napa cabbage, celery, carrots, and bell peppers; cook and stir until vegetables are completely heated, about 5 minutes. Steps:
- Heat the oil in a large skillet over medium-high heat. Cook the pork chops in the hot oil until well-browned on each side, about 10 minutes per side.
- Add the cabbage, onion, apple, 2 cups of water, garlic, Worcestershire sauce, salt, and pepper to the skillet; bring to a boil, reduce heat to medium-low, and place a cover on the skillet. Cook at a simmer until the pork chops are completely tender, 45 minutes to 1 hour.
- Remove the pork and vegetable mixture from the skillet, leaving as much of the liquid in the skillet as possible. Whisk the water and flour together in a small bowl. Raise the heat under the skillet to medium-high. Pour the flour mixture into the remaining liquid in the skillet. Cook, stirring constantly, until the gravy thickens and begins to boil. Reduce heat to low and continue to simmer an additional 5 minutes. Pour the gravy over the pork and vegetable mixture.

- Heat the olive oil in a small saucepan over medium-high heat. Add the thyme, garlic, onions and chili powder; saute until onions are tender and spices are fragrant. Add in the brown sugar, cumin, coriander, orange and lime juices, and chipotle with adobo; cook just until the sugar dissolves. Turn off the heat and let cool completely.
- Meanwhile, set up your smoker for what is called the burn-down method. To do this, fill the charcoal bed with unlit coals and add only a few lit coals to the very top. The coals on top slowly light the ones underneath and burn down slowly over time. If using a charcoal grill, set it up for an indirect heat technique and place the soaked wood chips on top of the coals. Preheat the grill from 220 to 250 degrees F. To maintain this low temperature, use only half as much charcoal as usual. (A half chimney-full.)
- Make the Spicy Cabbage Slaw ahead of time, while the pork is smoking so that the flavors can marry and get really happy together. To make the slaw, shred the cabbage; add to a large bowl with the carrots, jalapenos and green onions.Whisk the mayonnaise, vinegar, olive oil, and celery seeds until smooth; season with salt and pepper to taste. Pour the dressing over the cabbage mixture and toss to combine. Cover with a lid and place into the refrigerator until needed.
