GARLIC SAUTEED SPINACH
Dinner couldn't be simpler with Ina Garten's Garlic Sauteed Spinach recipe from Barefoot Contessa on Food Network. It's an easy, go-to side dish for your table.

Steps:
- Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
- In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.
QUICK AND EASY SAUTEED SPINACH

GINA'S SPICY CREAMED SPINACH

- Bring a pot of salted water to a boil over high heat. Add the spinach and simmer for 2 minutes. Drain the spinach in a colander. Press down on the spinach with a clean kitchen towel to release all of the liquid. Remove to a cutting board and roughly chop.
- Heat a large saute pan, over medium-high heat and add the butter and olive oil. When the butter has melted, add the shallots and garlic and saute until fragrant and tender. Stir in the red pepper flakes and spinach. Sprinkle with salt and pepper, to taste. Saute briefly, then add the heavy cream, nutmeg and Parmesan. Reduce the spinach mixture until it has thickened, about 2 minutes. Transfer to a serving bowl and serve.

I've been blessed and cursed with being able to season recipes to taste. Like my grandmother, a pinch of this, a dab of that, and where does it get me? I'm never able to recreate some really awesome recipes. I thought I'd take an opportunity to document this recipe for spinach, so I can make it again and again.

Steps:
- Chop onion and mince garlic cloves (I usually throw them together in my electric food chopper)and set aside.
- Heat skillet to medium high heat.
- If bacon isn't precooked, cook bacon until crisp.
- Crumble bacon into bits and set aside.
- Discard bacon grease or save for later use.
- Spray the same pan in which the bacon was cooked with nonstick cooking spray.
- Sauté onion and garlic until tender.
- Add frozen spinach and continue cooking until spinach is thawed.
- Add crumbled bacon bits, nutmeg, dill, black pepper, and salt to taste.
- Continue cooking until most of the moisture from the spinach has evaporated.
- Serve alone, as a side, inside an omelet, or use it to make a quiche.
- Enjoy!

- Wash spinach well in several changes of cold water and remove the stems.
- Heat the butter and oil in a large saucepan, saute the onion until golden, then stir in the garlic and ginger, and saute for an additional 1 or 2 minutes.
- Add the seeds, ground spices and salt and mix well.
- Toss in the spinach with only the water that remains on the leaves after washing.
- Heat very low and cook, uncovered, stirring frequently, until the spinach is cooked (it may be necessary to add a little more water to prevent spinach sticking to pan).

- Discard blemished spinach leaves and tough stems. Rinse the spinach and drain well.
