SPICY SHRIMP

Steps:

  • In a 12-in. cast-iron or other ovenproof skillet, cook bacon over medium heat until partially cooked but not crisp; drain. Stir in the butter, seafood seasoning, mustard, chili powder, pepper, hot sauce, basil, oregano and thyme. Cook over low heat for 5 minutes. Add garlic; cook 1 minute longer. Remove from heat and stir in shrimp., Bake, uncovered, at 375° until shrimp turn pink, 20-25 minutes, stirring twice.

1-1/2 teaspoons chili powder
1 teaspoon pepper
1/2 to 1 teaspoon Louisiana-style hot sauce
1/4 teaspoon each dried basil, oregano and thyme
2 garlic cloves, minced
1-1/2 pounds uncooked shell-on medium shrimp

SPICY BABA GANOUSH ON THE GRILL

Grilling the eggplant adds smokiness that pairs nicely with the heat of the red pepper flakes in this baba ganoush recipe. Serve with pita chips and raw veggies.

Spicy Baba Ganoush on the Grill image

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Using a fork, poke holes in the eggplant so steam will be able to release during cooking.
  • Place eggplant on the preheated grill. Grill until skins are charred, about 30 minutes, turning occasionally. Transfer to a baking pan, cover, and let steam for 10 minutes.
  • Using your hands, carefully remove the stem and the skin; the skin should be split open and peel off easily. Discard the skin and place flesh in a colander; let drain for 20 minutes. Press out any remaining moisture with paper towels.
  • Place eggplant in a food processor. Add tahini, lemon juice, za'atar, crushed red pepper, salt, paprika, and garlic. Pulse until smooth. Add olive oil and parsley; pulse until oil is incorporated. Garnish with additional crushed red pepper flakes and parsley if desired.

  • Roast and char eggplant on an open fire on medium-low heat. Use tongs to rotate and cook all over until the eggplant is completely cooked, the skin flaking and juices are starting to run out (the process should take 10-15 minutes)
  • Place roasted eggplant in a shallow rimmed bowl. Rest for 10 minutes and allow to cool to room temperature. At this point, sticky juices will be released in the bowl. Pour this out into a bowl for later.
  • Gently peel the flaking skin of the eggplant and scoop the flesh into a small food processor. Add the reserved eggplant juices, tahini, garlic, lemon juice and sea salt flakes. Process into a silky-smooth purée.
  • Scoop baba ghanoush into a shallow serving bowl. Using the back of a spoon, make a swirling pattern in the dip. Drizzle olive oil into the swirls. Sprinkle smoked paprika and ground cumin. Top with toasted pine nuts, parsley and micro herbs.
