Steps:
- Heat oven to 325°F. In medium bowl, stir together spinach, cream cheese, Parmesan cheese, mayonnaise, garlic and pepper.
- Spoon 2 tablespoons cheese mixture on each bread slice. Sprinkle with pine nuts. Place on ungreased cookie sheet.
- Bake 10 minutes or until thoroughly heated and nuts are toasted. Serve warm.

- Preheat the oven to 425 degrees F. Toss the bacon with the brown sugar in a medium bowl until evenly coated. Arrange the bacon on a baking sheet and bake until light golden around the edges but still very soft, about 7 minutes. Transfer to a plate. Wipe the baking sheet clean, then spray with cooking spray.
- Stir together the spinach, cream cheese, Parmesan, mayonnaise, garlic and 1/4 teaspoon pepper in a medium bowl.
- Spoon 1 tablespoon of the spinach mixture onto each slice of bread and wrap it with a piece of bacon so that the ends are tucked under the bread (it should look a bit like a belt). Arrange the crostini on the prepared baking sheet and bake until the bacon is dark golden, about 15 minutes. These are best served warm.

- Cut the French bread in half lengthwise. Place cut side up on a baking sheet and toase in a 350 degree oven until lightly browned. Sprinkle with garlic salt.
- Put the spinach and a small amount of water in a saucepan and cook until tender. Drain and squeeze out all moisture.
- Combine the spinach and the cream cheese and mix well. Spread over the cut sides of the bread.
- Lay mozzarella slices over the spinach. Broil until cheese melts. Slice into 1- or 2-inch pieces to serve.
SPINACH AND CHEESE CROSTINI RECIPE

- Place baguette slices on baking sheet. Bake at 375°F for 4 to 6 minutes, or until toasted. Set aside. Melt butter in 10-inch skillet over medium heat. Add onion and garlic. Cook and stir 2 to 3 minutes, or until softened. Add spinach. Cook and stir 30 to 60 seconds, or until warm. Cool slightly. Place cream cheese in mixer bowl. Attach bowl and flat beater to mixer. Turn to Speed 2, mix about 30 seconds. Add spinach mixture. Continuing on Speed 2, mix about 30 seconds. Add red peppers. Continuing on Speed 2, mix about 30 seconds. Spread spinach mixture on toasted baguette slices. Top each slice with about 1 teaspoon Cheddar cheese. Bake 375°F for 5 to 8 minutes, or until thoroughly heated and cheese is melted. Serve warm. CREAMY SPINACH BACON CROSTINI

- 1. 1.Slice bread, at an angle,and lay on sheet pan, and place in a 350 oven for 5-8 min. Just to crisp up a bit, set aside. 2.In bowl, mix your cream cheese, bacon, mayo, garlic, and black pepper until smooth. 3.Add in your spinach, and Jack cheese, mix well.
- 2. 4.Spread your spinach and cheese mixture evenly over the toasted bread, sprinkle with chopped pecans. 5.Place in oven at 350 and bake for about 20 minutes. Enjoy!
SPINACH ARTICHOKE CROSTINI
This is so quick to put together, and it always disappears just as quickly! I use a whole wheat baguette when I can get it, but white works just as well. This is also nice with a bit of olive oil drizzled over. I modified this recipe from one I found on another site.

- Preheat oven broiler.
- Slice bread on a diagonal about 1/3" thick and place on a large cookie sheet.
- In a medium bowl, combine artichoke hearts, cheese, onion, spinach, tomato, and mayonnaise.
- Spread the artichoke mixture evenly on the baguette slices.
- Sprinkle on garlic, pepper, and salt if desired.
- Place in oven and broil for about 2 minutes, or until artichoke mixture is melted and lightly browned.

SPINACH, PROSCIUTTO AND RED BELL PEPPER CROSTINI

- Heat 1 teaspoon oil in heavy large skillet over medium heat. Add bell pepper and sauté until crisp-tender, about 8 minutes. Transfer pepper to small bowl.
- Heat same skillet over high heat. Add spinach and sauté 2 minutes. Reduce heat to medium and sauté until spinach is tender, about 2 minutes longer. Cool in skillet. Transfer spinach to work surface; chop spinach. Set aside.
- Heat 1 teaspoon oil in same skillet over medium heat. Add garlic and sauté until fragrant, about 30 seconds. Add prosciutto and sauté 30 seconds. Add chopped spinach. Sauté 2 minutes. Season to taste with salt and pepper. Remove from heat. Mix in cream.
- Preheat broiler. Arrange bread slices on large baking sheet. Broil until lightly toasted. Turn bread slices over. Brush top of bread slices with remaining 2 tablespoons oil. Broil until lightly toasted. Cool. (Components can be made 8 hours ahead. Cover spinach mixture and bell pepper strips separately; refrigerate. Store toasts airtight at room temperature.) Spoon generous 1 tablespoon spinach mixture atop each toast. Arrange bell pepper strips atop toasts. Sprinkle with Parmesan cheese. Broil crostini until cheese bubbles and spinach mixture is hot, about 2 minutes. Transfer crostini to plate and serve.
