- In a jar with a tight-fitting lid, combine the first five ingredients; shake well. Set aside. In a skillet, cook and stir the almonds and sugar over medium heat until sugar is melted and almonds are coated, 5-7 minutes. - Remove the skin from the chicken and discard, then shred the meat from the bones. Discard the carcass (or freeze for stock or soup another time, see right).
- Drain the mandarin segments over a bowl to catch the juice, then whisk together with the sesame oil and vinegar. If you're using xanthan gum, put this in a bowl and, using a small sauce whisk, whisk in 1 tsp of the dressing at a time until you have a smooth, runny paste, then whisk in the remaining dressing.
- Layer the shredded chicken, mandarin segments, red onion, pepper, cabbage, salad leaves and sesame seeds in a big salad bowl or on a platter. Pour over the dressing, toss to combine then serve.

- In a small bowl, whisk the first 7 ingredients until blended. Pour 3/4 cup marinade into a large shallow dish. Add chicken; turn to coat. Cover and refrigerate at least 3 hours. Cover and refrigerate remaining marinade., Preheat broiler. Drain chicken, discarding marinade in dish. Place chicken in a 15x10x1-in. baking pan. Broil 4-6 in. from heat 4-6 minutes on each side or until a thermometer reads 165°. Cut chicken into strips., Place spinach on a serving platter. Delicious, refreshing salad that can really be adapted to your tastes. I got this from a friend and have had many rave reviews whenever I serve it.

- In a jar, combine all ingredients for the dressing.
- Shake well and refrigerate for at least one hour to blend flavours.
- (I make it the night before) In a heavy skillet, cook almonds and sugar over medium heat until sugar melts and coats almonds, stirring frequently.
- Cool.
- Break apart if necessary.
- In large bowl, combine spinach, celery and green onions.
- Just before serving, add almonds and orange segments.
- Toss gently.
- Pour dressing over salad and toss.
- P.S.I always double the amount of almonds because they really add a wonderful flavour to the salad-- and because some mysteriously disappear before they make it to the salad!

When choosing salads as a low-fat diet choice be careful of ingredients used and the amount of dressing drizzled over the salad. Both can add up fat grams and calories quickly.

- Chop bacon and fry until crisp.
- Drain on paper towel to remove as much excess fat as possible. Wash spinach and lettuce then tear leaves into bite size pieces.
- Place in Salad bowl.
- Add cashew pieces, grated cheese, and crumbled bacon.
- Toss when ready to serve. Serve with poppy seed dressing.
- NOTE: Fat grams may be reduced to 1 gram per serving if bacon and cashews are eliminated.
- Each add approximately 3 grams of fat per serving.
