SPINACH MEATBALLS
This recipe provided by Texas Beef Council. It is lean and packed with iron. Baked, not fried and can be frozen.Update: 03/13/2010 Elainemae, a reviewer suggested we use infant's rice cereal instead of breadcrumbs and it serves a dual purpose - increase the iron content. Great idea! :)

Steps:
- Preheat oven to 350°F.
- In a medium bowl, combine ground beef, spinach, egg, onion powder, garlic powder, bread crumbs, salt & pepper.
- Mix all ingredients well and form into small meatballs.
- Place meatballs on jelly roll pan and place into preheated oven; bake for 40-50 minutes (depending on size of meatballs).
- While meatballs are cooking, prepare pasta according to package directions, drain and keep warm.
- In a large skillet or sauce pan, pour jar of prepared spaghetti sauce.
- When meatballs are fully cooked, remove from oven and place in sauce.
- Simmer on medium heat 6-8 minutes.
- Serve meatballs and sauce over cooked pasta.
- Top with grated Parmesan cheese.
GERMAN-STYLE BACON-WRAPPED TURKEY MEATBALLS
Oktoberfest is a wonderful time of year, and I made these appetizers to highlight what reminds me of Königsberger Klopse, dressed up with Black Forest speck. If you can't find speck (a German dry cured bacon), prosciutto is the next closest substitute. Feel free to serve with senf (German mustard) und weissbier (wheat beer). Prost!

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine ground turkey, bread crumbs, egg, ketchup, garlic, ginger, salt, and pepper in a bowl; mix until well combined. Shape 2 tablespoons of turkey mixture into balls. Wrap each turkey ball with speck. Arrange meatballs on a baking sheet.
- Bake in the preheated oven until no longer pink in the center, about 25 minutes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with parchment paper.
- Mix ground beef, eggs, Parmesan cheese, parsley, bread crumbs, garlic, onion powder, salt, black pepper, oregano, and basil in a large bowl until thoroughly combined. Form meat mix into 2-inch meatballs.
- Wrap half a bacon slice around a meatball; turn the meatball around 45 degrees and wrap a second half-slice of bacon around the meatball so the meat is enclosed by bacon. Repeat, forming 12 meatballs and wrapping each one in 2 half-slices of bacon. Place wrapped meatballs onto the prepared baking sheet with seam sides down.
- Bake in the preheated oven until meatballs are no longer pink inside and bacon is crisp, about 45 minutes. An instant-read meat thermometer inserted into the center of a meatball should read at least 160 degrees F (70 degrees C). Pour off excess grease.

SPINACH MEATBALLS WRAPPED IN BACON
Really great way to eat a lot spinach. (You may have one or two meatballs wrapped in bacon These meatballs don't turn out green.

Steps:
- Wash spinach, and blend with 1/4 cup of water (spinach should look like a green smoothie).
- Place everything in large bowl, mix until everything is fully green.
- Roll into 1 inch balls, and wrap in bacon.
- There should be a side that's not covered in bacon, place that facing down on the pan that goes into the oven.
- Cook @ 400 degrees Fahrenheit for 40 minutes.
- After 40 mins, pick out the largest meatball you can eyeball and cut it open to check how well done it is.
