CRISPY PARMESAN BOWLS
Steps:
- In a large nonstick skillet, spread 1/4 cup cheese thinly and evenly over the bottom to form a 7-inch circle. Put the pan over medium heat and cook until the cheese is bubbling and lightly browned, about 3 minutes. Remove the pan from the heat. Put a small bowl upside down on a cutting board. When the bubbling stops, about 1 minute, carefully remove the disk with a thin metal spatula and drape it over the bowl. Press gently with the spatula so it forms a bowl. Be careful, as it is very fragile. Let cool.
- Remove the Parmesan bowl, put it onto a plate, and fill with Caesar salad. Serve.

- Preheat the oven to 375 degrees F.
- For the Parmesan Frico Cups:
- Place a silpat mat on a baking sheet. Place 6 (1/4-cup) mounds of Parmesan cheese on the mat and gently tap down until each mound is flat and 4 1/2 to 5 inches in diameter. Bake for 8 to 10 minutes, until golden and bubbly. Working quickly, use a thin spatula to transfer the Parmesan Frico to a muffin tin. Gently place a small drinking glass on top of the Parmesan Frico to mold it into the shape 1 of the muffin cups. Let cool until firm, about 5 minutes. Continue with the remaining Parmesan cheese.
- For the Citrus Vinaigrette:
- Combine all the ingredients in a jar or a tight-sealing plastic container. Shake to blend.
- For the Spinach Salad:
- In a large bowl, combine all the ingredients. Drizzle with vinaigrette and toss to combine. Divide the salad among the Parmesan Frico Cups and serve immediately.

- Heat a 12-inch nonstick skillet over medium-low heat.
- Mix together the Parmesan and crushed red pepper in a small bowl. Add to the skillet in a very thin layer and cook until it is light brown, melted and bubbly, about 1 1/2 to 2 minutes. Remove the skillet from the heat and allow to sit and cool slightly, 20 to 30 seconds. Loosen the cheese circle by running a rubber spatula around the edge of the skillet. Carefully transfer the cheese to the inside of a small bowl (approximately 1 1/2 to 2 quarts), using the spatula to help push and form the cheese to the shape of the bowl.
- Allow it to cool for several minutes before removing to allow the shape to set. (You can leave it inside the bowl until serving.)
- Place the Parmesan bowl on a plate and fill with the greens. Drizzle the salad with the dressing. Top with the red onion, radish, blackberries and feta.
SPINACH BERRY SALAD WITH CANDIED WALNUTS
Steps:
- For the dressing: Whisk together the vinegar, mustard, honey, jam, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Whisk in the oil in a slow stream and continue whisking until the dressing is emulsified.
- For the salad: Toss together the spinach, blackberries, onions and Candied Walnuts in a large salad bowl. Drizzle with the dressing and toss. Using a vegetable peeler, shave some cheese over the top.
- Line a baking sheet with parchment paper and set aside.
- Melt the butter in a medium saucepan over low heat. Add the walnuts and stir to coat. Raise the heat to medium, add the sugar and cook until the sugar is dissolved and caramelized, stirring often, about 5 minutes. Stir in the cinnamon, 1/2 teaspoon salt and 1/4 teaspoon pepper, then transfer the mixture to the baking sheet. Spread the nuts in a single layer. Let the walnuts cool until hardened, about 15 minutes.

- In a medium saucepan, stir together cranberry juice, sugar, and cornstarch.
- Bring to a boil, stirring often.
- Cool.
- Add raspberry vinegar and frozen raspberries, set aside.
- Toast hazelnuts on a baking sheet in a preheated 350 degree oven for about 10 minutes.
- Cool and coarsely chop.
- Prepare Parmesan shells by spraying an 8 inch nonstick skillet with nonstick cooking spray.
- Heat pan over medium heat.
- For each shell, add 1/3 cup coarsely grated Parmesan to the bottom of the pan, distributing the cheese evenly across the pan.
- Allow cheese to bubble for about 30 seconds before adding an additional 1/4 cup of finely grated Parmesan.
- When cheese starts to turn golden-brown, remove from the pan and place over a mold or an inverted small stainless steel bowl.
- Cool.
- In a large bowl, toss spinach, turkey and hazelnuts.
- Divide the salad among the cooled Parmesan shells.
- Serve immediately with the dressing on the side.
