SPRINKLES CINNAMON CREAM CHEESE FROSTING

This delicious cream cheese frosting recipe came with the Sprinkles Pumpkin Cupcake mix that I purchased from the Williams-Sonoma catalogue, and baked over the holidays this year. Sprinkles cupcakes have been featured on Oprah as one of her favorite things and, having eaten more than a few while I was in California last year, I would definitely have to agree! I have made other cream cheese frostings before but this one was the best in my opinion. Although it is featured with the pumpkin cupcake, I think it would pair equally well with a spice cake. This recipe generated enough to very generously cover 12 cupcakes. Use the best cream cheese, butter, cinnamon, and vanilla you have. I hope you enjoy it as much we did!

Sprinkles Cinnamon Cream Cheese Frosting image

Steps:

  • Using the flat beater in your electric mixer, beat cream cheese, unsalted butter, salt, and cinnamon on medium low speed until smooth and creamy (approximately 2 or 3 minutes).
  • Reduce speed to low and gradually add the confectioners' sugar, beating until incorporated.
  • Add the vanilla; beat just until mixed.
  • Do not overbeat or the frosting will incorporate too much air. It should be creamy and dense like ice cream.
  • Add milk, 1 teaspoon at a time, if frosting is not of a spreadable consistency.

8 ounces cold cream cheese (recommend Philadelphia full fat, do not use fat free!)
1/2 cup unsalted butter (not cold, but still firm)
1/8 teaspoon salt
1/2 teaspoon cinnamon (I used Vietnamese cinnamon)
3 3/4 cups confectioners' sugar, sifted
1/2 teaspoon vanilla
milk (add in 1 teaspoon increments at the end only if needed)

Steps:

  • Place strawberries in the bowl of a small food processor; process until pureed. In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and salt on medium speed until light and fluffy. Reduce mixer speed and slowly add confectioners' sugar; beat until well combined. Add vanilla and 3 tablespoons strawberry puree (save any remaining strawberry puree for another use); mix until just blended. Do not overmix or frosting will incorporate too much air. Frosting consistency should be dense and creamy, like ice cream.

1/2 cup whole frozen strawberries, thawed
1 cup (2 sticks) unsalted butter, firm and slightly cold
Pinch of coarse salt
3 1/2 cups confectioners' sugar, sifted
1/2 teaspoon pure vanilla extract

VANILLA BUTTERCREAM FROSTING (FROM SPRINKLES CUPCAKES)

My sister got this buttercream frosting off the box of a Sprinkles Cupcake mix, made famous by Oprah. My sister said this was amazing. Update: I have finally gotten around to making this myself. I will say, that I don't like my desserts overly sweet and. though this was very good, I think I would probably decrease the amount of sugar for my personal taste. I'm glad everyone else has liked it as-is, though. :)

  • In a bowl add sugar then add butter. Beat till blended. Next add salt.
  • Then add the milk and vanilla and beat for an additional 3 to 5 minutes or until smooth and creamy.

In a separate large mixing bowl, with an electric hand mixer on medium speed, whip together butter and sugar until pale and fluffy, about 3-4 minutes. Add in eggs one at a time stirring after each addition. (Now stand back and change out of any nice shirt you have on and) Add red food coloring and vanilla extract and mix until combine. In a small mixing bowl (or in the measuring cup you used to measure milk), combine milk and 1 tsp vinegar. Add milk mixture and flour mixture to cupcake mixture, alternating in two separate batches, mixing until combine after each addition. Divide batter evenly among 15 paper lined muffin cups, filling each cup about 2/3 full. Bake in preheated oven 18-21 minutes until toothpick inserted into center of cupcake comes out clean. Remove from oven and allow to cool about 2 minutes in muffin tin, then transfer to wire rack to cool for 10 minutes, then
  • *I warmed the butter in the microwave for about 9-10 seconds on HIGH power in a small microwave safe bowl, basically you don't want it softened but not cold either. Just in between the two. Also, alternately you could use unsalted butter and add 1/4 tsp salt to the recipe. I just always keep salted butter on hand so I wanted the recipe to use salted. So if you use salted you don't need to add any salt to the recipe.

Spread a small circle of red on top followed by a small light blue, use a toothpick to spread if needed (it helped me get a more circular shape around the edges with its finer point).
