Marzipan Pumpkin Petits Fours image

Steps:

  • Make the cakes: Preheat oven to 350 degrees. Coat nonstick mini-muffin tins with cooking spray.
  • Whisk flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg in a medium bowl. Whisk the sugars and eggs in a medium bowl. Whisk in pumpkin and vanilla. Whisk in butter until combined completely. Fold flour mixture into pumpkin mixture until no trace of flour remains (batter may be lumpy).
  • Scoop batter into tins, filling cups 1/2 full. Bake until testers inserted in the centers come out clean, 14 to 16 minutes. Transfer to wire racks, and let cool. (Cupcakes can be covered and refrigerated up to 2 days.)
  • Make the frosting: Beat cream cheese, confectioners' sugar, spices, and vanilla with a mixer on medium speed until light and fluffy, about 3 minutes.
  • Assemble the pumpkins: Cut tops from 2 cupcakes, and reserve bottoms for another use. Using a small offset spatula, spread 1 teaspoon frosting on the cut side of 1 cupcake top. Sandwich with other cupcake top, creating a round pumpkin shape. Spread 2 teaspoons frosting smoothly on sides of cupcake sandwich, and place on a parchment-lined baking sheet. Repeat with remaining cupcakes and frosting. Refrigerate until very firm, at least 3 hours (or overnight).
  • Knead together equal amounts fondant and marzipan, adding orange or brown food coloring until desired color is reached. (Reserve some fondant and marzipan to make white pumpkins if desired.) Dust a surface lightly with confectioners' sugar, and roll fondant mixture to 1/4-inch thickness. Using a 4 1/2-inch round cutter, cut out circles.
  • Place 1 pumpkin cake in center of 1 fondant circle. Bring sides of circle over cake, smoothing out folds, and press to enclose. Flip pumpkin over, and using a toothpick, make vertical grooves along sides. Poke a hole on top for a stem, and insert a chocolate stick. Repeat with remaining cakes and fondant. Using a clean, dry pastry brush or paintbrush, brush pumpkins with luster and pearl dusts if desired. These pumpkins will keep at room temperature up to 1 day.

  • In a large bowl, cream the butter, shortening and sugar until light and fluffy. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. In a small bowl, beat egg whites until soft peaks form; gently fold into batter., Pour into a greased 9-in. square baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., Cut a thin slice off each side of cake. Cut cake into 1-1/4-in. squares. Place 1/2 in. apart on a rack in a 15x10x1-in. pan., In a large bowl, combine glaze ingredients. Beat on low speed just until blended; beat on high until smooth. Apply glaze evenly over tops and sides of cake squares, allowing excess to drip off. Let dry. Repeat if necessary to thoroughly coat squares. Let dry completely., For frosting, in a small bowl, cream the butter, shortening and vanilla. Beat in confectioners' sugar and enough milk to achieve desired consistency. Place 1/2 cup each in two bowls; tint one pink and one green., Cut a small hole in the corner of a pastry or plastic bag; insert #104 tip. Fill with pink frosting; pipe a rosebud on each petit four. Insert #3 round tip into another pastry or plastic bag; fill with green frosting. Pipe a leaf under each rose.

Square Pumpkin-Cake Petits Fours with Honey-Chocolate Glaze image

Steps:

  • Make the petits fours: Preheat oven to 350. Butter 2 rimmed baking sheets. Line with parchment, butter and flour parchment, and tap out excess.
  • Whisk flour, turbinado sugar, baking powder, cloves, allspice, and salt in a large bowl. Whisk pumpkin, cream, and vanilla in a medium bowl.
  • Beat butter and granulated sugar with a mixer on medium-high speed until pale and fluffy, about 5 minutes. Add eggs, 1 at a time, and yolk, beating well after each addition, scraping down bowl as needed. Reduce speed to low, and add flour mixture in 3 additions, alternating with pumpkin mixture, starting and ending with flour mixture. Raise speed to medium, and beat until well combined. Divide batter evenly between sheets.
  • Bake, rotating sheets halfway through, until a toothpick inserted in centers comes out clean, about 25 minutes. Let cool in sheets on wire racks for 30 minutes. Run a knife around edges of cakes, invert cakes onto racks, and remove parchment. Let cool. Invert cakes onto parchment-lined baking sheets, cover each with plastic, and refrigerate for at least 4 hours or preferably overnight.
  • Make the glaze: Place chocolate in a food processor. Bring cream, honey, and vanilla seeds and pod to a simmer in a small saucepan, whisking until combined. Remove from heat, cover, and let steep for 15 minutes. Return cream mixture to a simmer, then pour through a fine sieve over chocolate. Process until completely smooth. Transfer to a bowl, and whisk in butter. Cover with plastic until ready to use. (Stir gently before glazing cakes.)
  • To assemble: Cut each cake horizontally into thirds to create thin layers. Spread 1/3 cup glaze on top of 1 cake layer, and gently press a second cake layer on top. Repeat layering once to create a 3-tiered cake. Repeat with remaining layers to create a second cake. Pour remaining glaze on top of cakes. Refrigerate until very firm, about 1 1/2 hours (or overnight).
  • Using a serrated knife, trim each cake into a 5-by-11 1/4-inch rectangle, reserving trimmings for another use. Cut each rectangle into 1 1/4-inch squares, wiping knife clean frequently. Just before serving, dust with cocoa powder.

Quick and Easy Pumpkin Squares image

Steps:

  • Preheat the oven to 350 degrees.
  • CRUST: Empty cake mix into a bowl. Cut in 1/2 cup butter until mixture forms moist even crumbs. RESERVE ONE CUP MIXTURE. Add the egg to the remaining mixture and stir until crumbled together.
  • Spoon into a 9" x 13" greased pan and press lightly to form an even layer. Bake for 10 minutes and remove, but leave the oven on.
  • FILLING: Beat two eggs until foamy. Beat in pumpkin, milk, spices and 1/4 cup of brown sugar. Pour on top of baked layer. (It should be liquidy but don't worry - it will bake up fine.).
  • TOPPING: Combine reserved crumb mixture with 1/2 tsp cinnamon, 1/4 cup brown sugar and 1/4 cup butter. Sprinkle to form an even layer of crumbs on top of the pumpkin batter.
  • Bake until custard is slightly set in the center, about 30-40 minutes. Let cool completely.
  • GARNISH with whipped cream or ice cream and serve!

Polka-Dot Petits Fours image

Steps:

  • Genoise:Preheat oven to 375 degrees. Place rack in lower third of oven. Butter two 8-by-2-inch round cake pans. Line with parchment; butter and flour paper. Sift together flour, 2 tablespoons sugar, and salt; set aside. Pour melted butter into a large bowl; set aside.
  • Combine remaining sugar, eggs, and yolks in bowl of electric mixer. Using whisk attachment, mix on medium-high until pale in color and tripled in volume, about 5 minutes. Add vanilla and orange zest.
  • Detach bowl from mixer. Add one-third of flour mixture. With spatula, gently fold in until just incorporated. Add remaining flour mixture in two more additions. Add one-third of batter to butter; gently fold into butter until just combined. Fold in remaining batter. Divide into prepared pans. Bake until just golden and cake springs back when gently touched, 20 to 25 minutes. Remove from oven; let cool in pans, running knife around edges occasionally. Wrap in plastic; refrigerate in pans overnight. Make this cake up to 1 week ahead and freeze.
  • Orange Glaze:Melt butter in heatproof bowl over pan of simmering water. Add confectioners' sugar, milk, and orange juice; stir until smooth and pourable. Thin with milk a bit at a time if needed. Keep warm; use immediately.
  • Royal Icing:In bowl of mixer fitted with paddle, mix meringue powder, sugar, and 7 to 8 tablespoons water on low. Mix until icing holds a line when a spatula is pulled through it, about 15 minutes. If making ahead, store in an airtight container; color just before using by adding coloring a bit at a time, stirring with spatula.
  • Working with one cake at a time, invert genoise onto clean surface. With serrated knife, trim cake level; cut in half horizontally. With pastry brush, brush away crumbs. Spread half the marmalade over top of one half. Using a 2-inch round cutter, cut one round from unglazed half, then move to glazed half and cut again. The two pieces will stick, creating a petit-four cake. Remove petit-four cake from cutter; set on wire rack over rimmed baking sheet. Continue, making 8 petit-four cakes from each cake.
  • Place petit-four cake on fork; hold over pan of orange glaze. With ladle, pour glaze evenly over cake, repeating to cover all surfaces. Slide glazed cake onto rack. Continue to coat remainder. Let set, 5 minutes.
  • Fit pastry bag with a #1 Ateco tip; fill bag with royal icing. Pipe dots over each petit four. Serve.

  • Place sugar, butter, milk, honey & egg in a large sauce pan. On low heat, stir constantly until melted. Now add baking soda and keep stirring until foamy (do not boil). Take off of the heat.
  • Cream the icing sugar with soft butter using a mixer. Add pudding (at room temperature) in stages until you have used all and you have nice thick mixture.
  • Place the first cake base onto a tray/chopping board or anything that you will be able to fit in the fridge. Cover the first base with pudding filling. Cover with the second cake base and cut in half crosswise. Spread jam over one of the halves(the more the better). At this stage you will see if you have still some filling left. If yes, you can spread it over the jam. Now cover with the other half that has been already filled. This is ready to go to the fridge. Place a sheet of baking paper over the cake and weigh it down with a chopping board (or anything that puts a bit pressure on the cake). Keep in the fridge overnight.
  • Bring whipping cream to a boil. Pour it over finely chopped chocolate and let set for 2 minutes before mixing until the chocolate has dissolved completely. Return to the fridge for the chocolate to set. Once set, trim off the edges and slice into individual portions.
