SQUIRREL STEW

This is 1 of the many recipes that I have developed over my lifetime of outdoor life.

SQUIRREL STEW image

Steps:

  • 1. Dredge squirrel pieces in flour, salt, and pepper.
  • 2. Brown in butter.
  • 3. Add squirrel and all ingredients except the tomatoes to the boiling water.
  • 4. Cover and simmer for 1 to 2 hours.
  • 5. Add the tomatoes and continue to simmer for another hour.

1 squirrel, cut up
all purpose flour
salt and pepper
2 1/2 Tbsp butter
7 c boiling water
1 tsp thyme
1 c corn
3 potatoes, cubed
3 medium onions, sliced
2 c tomatoes, canned
1/4 tsp cayenne pepper

SLOW COOKER SQUIRREL AND VEGGIES

This slow-cooked squirrel is a no brainer for a first-time cooker of squirrel. My husband and 2 sons were very impressed as if I had been making this dish my entire life. The meat will fall off the bone.

Slow Cooker Squirrel and Veggies image

Steps:

  • Place the onion, carrots, potatoes, bell pepper, garlic, chicken bouillon, salt, and pepper in a slow cooker. Lay the squirrel meat on top of the vegetable mixture. Pour enough water over the mixture to cover completely. Cover and cook on HIGH 6 hours. Stir the flour into the mixture and cook another 2 hours.

Old-Fashioned Squirrel Stew Recipe image

Steps:

  • Place the squirrels in a stew pot, add water and bring to a boil. Reduce heat and simmer until the meat pulls easily from the bone, about 1 1/2 to 2 hours. Skim the surface of the water occasionally. Separate meat from bones, and return the meat to the broth. Add the remaining ingredients, except corn, and cook for one hour. Add corn, and cook 10 minutes more. This recipe yields ?? servings.

3 squirrels cut serving pieces
3 quarts water
2 slices bacon diced
1/4 teaspoon cayenne pepper
1/2 teaspoon freshly-ground black pepper
1/2 teaspoon garlic powder
1 teaspoon salt
1 bay leaf
1 cup chopped onion

2 cups diced potatoes
2 cups fresh or frozen lima beans
2 cups fresh or frozen corn

Steps:

  • Salt the squirrel pieces well and then dust in flour. Heat the olive oil in a large Dutch oven or other heavy, lidded pot over medium-high heat. Brown the squirrels in batches, being sure to not overcrowd the pot. Move the browned pieces to a plate or cutting board while you cook the rest.
  • When the squirrels have been nicely browned, remove them all from the pot and add the onion. Saute the onion until it just begins to brown on the edges, about 6 to 8 minutes. Add the garlic and cook another minute. Add the tomato paste, mix well and cook this for 2 to 3 minutes, stirring often.
  • Pour in the white wine, vinegar and about 1 quart of water. Add the savory, red pepper flakes and paprika, then the torn-up tomatoes, then the squirrel. Mix well and bring to a simmer. Add salt to taste and cook gently until the squirrel wants to fall off the bone, about 90 minutes. Fish out all the squirrel pieces and pull them off the bone -- this makes the stew a lot easier to eat. Return them to the pot.
  • Add the smoked sausage and the greens and cook until the greens are done, about 10 minutes (If you are using collards, they need more than 10 minutes to cook so adjust accordingly). Add salt, black pepper, chile and vinegar to taste and serve with crusty bread.

  • Place whole squirrels in a dutch oven with 2 cups stock. Braise the squirrel meat, covered for about 30 minutes until tender.
  • Remove the squirrels and stock to a separate container to cool. Debone the squirrels when they're cool enough to handle, and add the meat into the stock. Reserve it all for adding back into the dutch oven later.
  • Add 4 tablespoons of bacon drippings to the empty dutch oven, and fry the onions until browned.
