STEAK SAN MARCO

This is a super easy, easy-on-the-budget meal. My mother made this for years, and it was always a family favorite. Great if you are pressed for time, and it tastes even better if you make it the day before and refrigerate it overnight. Serve with rice or egg noodles.

Steps:

  • In a large skillet, arrange meat; cover with onion soup mix and tomatoes (cut tomatoes into pieces).
  • Sprinkle with oregano, garlic powder, pepper, oil and vinegar.
  • Bring to a simmer; cover and cook 1 1/2 hours or until meat is tender.

2 lbs chuck steaks, 1 inch thick, cut into serving pieces
1 (1 ounce) envelope onion soup mix (we use Lipton)
1 (28 ounce) can peeled Italian tomatoes
1 teaspoon oregano
2 tablespoons vegetable oil
2 tablespoons red wine vinegar
pepper
garlic powder

I found this recipe about 30 years ago in a magazine - though I no longer remember which one. Wonderful when you want a meat dish!! And very simple to make.

  • Simmer covered 1 and 1/2 hours or until meat is tender.

2 lbs chuck steaks, cut into serving pieces.
1 envelope onion soup mix (I use Lipton's)
1 (16 ounce) can peeled Italian tomatoes
1 teaspoon oregano
garlic powder, to taste (or garlic clove, chopped fine)
pepper, to taste
2 tablespoons cooking oil (I prefer olive oil)
2 tablespoons wine vinegar

Steps:

  • 1. In a large electric skillet (set at 350 degrees), heat oil and red wine vinegar.
  • 2. Add steak strips and cook until no longer pink.
  • 3. Reduce heat to simmer (200 degrees); then add tomatoes (do not drain), soup mix, garlic, oregano, and black pepper. Cover and cook for about 1 1/2 hours until liquid is reduced and meat is very tender, stirring occasionally.
  • 4. Serve over hot cooked egg noodles or rice.

3 lb cubed steak, cut into 1/2" strips
2 Tbsp vegetable oil
2 Tbsp red wine vinegar
1 can(s) (29 oz.) diced tomatoes with basil, oregano, & garlic
1 pkg dry beefy onion soup mix
2 clove garlic, minced
1/2 tsp oregano, dried

Steps:

  • In a large bowl or dish, combine the flour, salt and pepper. Add beef, a few pieces at a time, and toss to coat. Transfer to a 4-qt. slow cooker., In a small bowl, combine the carrots, celery, tomato sauce, garlic, bay leaf, Italian seasoning and Worcestershire sauce. Pour over beef. Cover and cook on low for 7-9 hours or until beef is tender. Discard bay leaf. Serve with rice., Freeze option: Place cooked steak and vegetables in freezer containers; top with sauce. Cool and freeze. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little water if necessary.

Steps:

  • Heat olive oil in cast iron frying pan with cover over medium high heat. Brown the meat on both sides - about 3 minutes a side. Last minute add the garlic.
  • Add remaining ingredients, bring to boil.
  • Reduce to simmer and cook covered 1.5 hours until meat is tender.

Steps:

  • 1. In a large saucepan, arrange meat in an even layer.
  • 2. Sprinkle with dry onion soup mix over the meat.
  • 3. Add undrained can of italian tomatoes. If you don't have italian tomatoes, any type of diced tomato will do.
  • 4. Sprinkle with Oregano, Garlic Powder, Pepper, Oil & Vinegar.
  • 5. Stir to combine all ingredients
  • 6. Cover & Simmer 2 1/2 hours on low, stirring every 30 minutes.
  • 7. Serve over rice or noodles or potatoes. Meat can be used in burritos!
