Steps:

  • For the fries and Marsala mushrooms: Turn oven on 425 degrees F, a rack in lower third and another in upper third of oven.
  • Gather bacon, fries, fresh and dried mushrooms, stock, butter, shallots, garlic, thyme, parsley, rosemary and steaks.
  • Arrange bacon on broiler pan or wire rack over baking sheet. Arrange the waffle fries on a second large baking sheet. Place fries on top shelf and bacon below in oven. Cook bacon 15 minutes or until brown and very crisp (bacon is optional topping for fries). Cook waffle fries (or potato wedges) 25 minutes, turning once, then season with salt and pepper before topping and serving.
  • Gill the portobellos (scrape the underbelly of caps) and thinly slice.
  • Place dried mushrooms in small pot or pan, cover with stock or water, bring to a boil and reduce to 1/2 cup liquid, 6 to 7 minutes.
  • Heat a large cast-iron skillet, cast-iron griddle or heavy skillet over medium-high heat for steaks.
  • Heat a large skillet over medium-high to high heat with EVOO, 2 turns of the pan. Add butter to oil and melt. Add fresh mushrooms and brown, 5 to 6 minutes. Meanwhile, peel and chop shallot and grate or chop 2 cloves garlic; strip thyme leaves and chop; finely chop parsley. Add shallots and garlic to mushrooms with salt and pepper and thyme; stir, add Marsala and let it evaporate. Add porcini mushrooms and most of the stock; reserve the last of it as it may collect grit. Add the juice of a lemon and parsley, then reduce heat under the mushrooms to warm.
  • Grab more ingredients: cream, cheese and chives.
  • Heat cream and a clove of crushed garlic in small pot over medium to medium-high heat, reduce by a third and add gorgonzola; turn heat to low.
  • For the sliced steak with rosemary: Season the steaks with kosher salt and coarse pepper. Strip rosemary leaves and coarsely chop, then rub into meat. Add olive oil to pan, 1 turn of the pan, add steaks and cook meat 8 minutes, turning occasionally. Brown and char a halved lemon with steaks the last minute or two. Reduce heat under pan and remove lemon, then add butter and crushed garlic to pan and spoon over meat. Remove meat and rest a couple of minutes, then slice against grain and top with lemon juice.
  • Chop bacon, if using.
  • Serve sliced steak with a small pile of greens to one side, mushrooms along the other side and waffle fries topped with gorgonzola sauce, bacon bits and chives at end of plate or platter.

  • Put a large pot of water on the stove to bring to a boil for pasta.
  • Preheat broiler to high with rack on top shelf.
  • Preheat medium skillet over medium-high heat.

  • When butter melts into extra-virgin olive oil, add in 2 cloves garlic and the shallots, sauté for 3 minutes.
  • Arrange steaks on the broiler pan.
  • Place under broiler - leave door to oven cracked ajar to limit flare ups and smoke.
  • Cook 4 minutes on each side for medium rare, up to 5 to 6 minutes on each side for medium well doneness.
  • To the garlic and shallots, add in flour and cook a minute more.
  • Whisk in stock, bring to a bubble, about 30 seconds then stir in the cream.
  • When cream comes to a bubble, add in blue cheese and sage and a few grinds of black pepper.
  • Stir until cheese melts.
  • Reduce heat to lowest setting.
  • Soften 4 tablespoons butter in microwave on high for 15 seconds.
  • Mix in chives and 2 cloves minced garlic and reserve.
  • Remove steaks from oven and let rest 5 minutes.
  • Place 1/4 of the chive and garlic butter mixture on each steak to melt down over the meat as they rest.
  • Drain pasta and toss with sauce to coat and combine evenly.
  • Taste to adjust seasoning.
  • Serve steaks with pasta alongside.

  • Heat a grill pan over high heat. Drizzle meat with oil and season with steak or grill seasoning blend. Grill meat 3 to 4 minutes on each side. Remove meat and let it rest 5 minutes to allow juices to redistribute.

Steps:

  • In food processor bowl, combine the shallot, chile, garlic, bay leaves, mustard seed, sherry, Worcestershire sauce and peppercorns and process into a smooth paste. Place the flavor paste in a pot and combine with the ketchup, soy and stock. Bring the mixture to a boil, reduce the heat to a simmer and cook 30 minutes. Cool and refrigerate for a make-ahead meal.

1 large shallot, coarsely chopped
1 red Holland or Fresno chile pepper
2 large cloves garlic
2 large fresh bay leaves
1 teaspoon mustard seed or dry mustard, 1/3 palmful
1/4 cup dry sherry

Creamy Mushroom Spaghetti image

Steps:

  • Heat water to a boil for the pasta, salt water, drop in pasta and cook to al dente.
  • Wipe mushrooms clean with damp towel. Remove woody stems. Thinly slice the mushrooms.
  • Heat a large deep skillet with extra-virgin olive oil over medium-high heat. Add the mushrooms and cook until deeply golden and tender, 10 minutes.
  • While mushrooms cook, halve the leeks lengthwise. Cut off a couple of inches from tough tops. Trim off root end. Thinly slice the leek then vigorously wash in a large bowl of cold water, separating all the layers to free of grit. Let leeks sit a few minutes then lift out of the water and dry on kitchen towel.
  • Add leeks to mushrooms along with garlic and season with salt, pepper and fresh thyme. Cook 3 to 4 minutes more then add wine, reduce half a minute then stir in cream and heat through. Toss pasta with mushrooms and adjust seasoning. Top with grated cheese at the table.

Steps:

  • Bring a large pot of water to a boil and salt the water.
  • Add pasta and cook for a minute or two less time than package directions say.
  • The pasta will soak up more juice and keep on cooking after we drain it, so we need it to be a little undercooked.
  • The shells with probably cook for 9 or 10 minutes.
  • Preheat a big, deep skillet or a medium saucepan over medium heat.
  • Place garlic on a cutting board and place the flat of your knife on top of each clove.
  • Carefully give the garlic a whack with the palm of your hand to separate the cloves form the skins.
  • Throw out the skins and chop up the garlic.
  • Remember to keep your fingers curled under and the edge of your knife tilted slightly away from your body.
  • Add evoo by pouring a slow stream of it twice around the pan.
  • This will be about 2 tablespoons, just enough to coat the bottom of the pan.
  • Do not let the oil pour out too fast; you want a slow, steady stream.
  • Add the garlic to the oil.
  • To chop the onion, cut the ends off and cut the whole onion down the center.
  • Wrap half and save it for another use.
  • Cut the other half into thin slices then turn the slices a quarter turn and chop them again.
  • Hold the tip of the knife on the cutting board and lift the back of the knife up and down over the onion to make the pieces really small.
  • Add the chopped-up onion to the garlic and oil.
  • Cook, stirring a lot, until the onions are mushy and look cooked, about 5 minutes.
  • Add the tomatoes to the onions and stir.
  • When the tomatoes come to a bubble, reduce the heat under the sauce to low.
  • Stir in basil pieces to wilt them.
  • Season the sauce with salt and pepper.
  • Preheat the broiler to high and place a rack in the center of the oven.
  • Drain pasta shells.
  • Add them to a casserole dish.
  • Add pesto sauce, ricotta cheese, and a handful of grated parmesan. S.

  • While the pasta is cooking, prepare the steak by first seasoning all sides with salt and pepper. Heat the olive oil in a medium-sized pan over medium-high heat. Cook the steak for about 3 minutes on each side, or until desired doneness. I prefer mine pretty pink in the middle, but if you like yours more well-done cook it a few minutes longer on each side. Remove the steak from the pan and cover it with foil. Let it rest for a few minutes before slicing it.
  • When the pasta is done boiling, drain it and then return it to the same pot. Lower the heat to low and pour in the half and half and add the butter. Crumble the blue cheese into the pasta. The smaller you crumble it, the better otherwise it will take longer for it to melt into a sauce. Stir the pasta with the cheese, half and half, and butter using the spatula to break up the cheese, if necessary. Continuing stirring until the sauce is smooth. Season the pasta and sauce with the salt and pepper.
  • To serve, spoon the pasta onto a bowl or plate. Top the pasta with the sliced steak. Garnish the plates with the chopped walnuts and parsley.
