GOAT CHEESE SAUCE
I really wanted my husband to try goat cheese, so the other night I asked him if he wanted scalloped potatoes in a cheese sauce; he said 'yes,' and this is what I made. Afterwards he said I would definitely need to make this again, as he had four helpings. When I told him that it was goat cheese all he could say was 'REALLY?' and kept eating. I would say this was a winner; how about you? Just pour finished sauce over your choice of pasta, potatoes, or whatever you like.

HERBED GOAT CHEESE SAUCE
This sauce is great over grilled chicken or grilled portabella mushrooms. Recipe came from a recipe swap years ago. If you cannot find herbed goat cheese, feel free to use plain goat cheese and throw in 1 tsp of mixed herbs including rosemary, thyme and basil.

- Thaw steaks and set grill direct grilling over medium high heat. Season steak with seasoning packet or sprinkle evenly with salt, pepper, and garlic powder on both sides.
- Cook steaks according to KC Steaks grilling chart or for about 6 minutes on the first side, 4 minutes on the second side, and finally turn steaks on their sides for a quick 1-2 minutes to crisp up the bacon. This should be about medium rare-medium doneness.
- While the steaks cook, saute the minced shallot and garlic in olive oil over medium high heat until tender, stirring often, about 5 minutes. Add in the cumin and cook for another minute. Lower temperature to low and stir in milk, turn back up the temperature to medium high and bring to a boil. Stir in goat cheese and let simmer until thickened. Finally, stir in chives and parsley right before serving.
- When steaks are fully cooked, remove from heat and let them rest 5-10 minutes. Serve with warm goat cheese sauce.

- In a saucepan, bring the balsamic vinegar to a boil. Stir occasionally for 15-20 minutes, until the vinegar has reduced by about a third and is syrupy. Don’t let it burn! Babysit it. Once syrupy, turn the heat to low and leave it on the stove.
- Add the steaks to the grill and cook for 2-3 minutes. Flip and cook for another 2-3 minutes. Add the goat cheese for the last minute of grill time, so that it melts slightly. (The times will depend on the size of your steaks and how well done you like them. I follow this grilling guide.)
